Pumpkin Muffins II
About this Cook
I'm a busy, working Mum of three busy kids, aged 9, 8 and 6. Between them, they keep my husband and me run off our feet but we do try to eat together every day. I live in England but found a love of American food when visiting a friend's house when I was young. I was a skinny looking kid and her wonderful Mom insisted on trying to fatten me up a bit - Who was I to stop her?!
My favorite things to cook
I love to cook a big meal and then watch my family and others (the more, the merrier) sit down together to enjoy it. Making cookies and cakes with the children is another favourite of us all.
My favorite family cooking traditions
I just love to see people enjoy home cooking and to understand and appreciate the effort that has gone into making it. It is so easy to buy everything ready made in the supermarket, and to be honest, we all have so many things we could be doing instead of being stuck in the kitchen.
My cooking triumphs
There aren't any particular dishes but I'm really pleased that I stuck at feeding the kids home-made baby mush!! Don't get me wrong, they have had their fair share of chicken nuggets, but now they understand what the healthier choice is and happily eat up their vegies and are wonderfully adventurous about trying new food. So pleased I stuck at it.
My cooking tragedies
Many! But you can only learn from your mistakes ;-)

Herman Biscuits
This made a lovely soft, light and fluffy dough. Really east to work and handle, I think I could user it in lots of diferent ways, I used Fliimsy's idea for cinnamon rolls this time. There was a little bit of a bitter taste from the baking soda (so not 5*) so I'm going to reduce the amount next time and hope I will still get good results. Thanks for the recipe.

Corn Dogs
Here in the UK, we have never tried corn dogs but always wondered .... Well I don't know what they taste like when you buy them, but these were delicious! I was happier to be able to choose own good quality bratwurst. They coating did cook quite dark like on some of the photos. I turned the heat down as far as I dare but there was no way they cooked for 3 minutes. No problem though, just heated through in the oven when they were all fried off. The only change, I reduced the sugar a little as we don't have a very sweet tooth.

Fluffy White Frosting
This isn't quite the recipe I have used previously, but I was silly and didn't save that one. I used these quantities, but kept heating over a doub;e boiler like 7 minute frosting. Worked brilliantly, just what I wanted, thanks.
