Carrot and Cranberry Muffins

Being really conscious of what I eat the ingredients looked good in this muffin recipe. I thought the batter was very thick & that the muffins would be very heavy. To my pleasant surprise they were not that heavy at all. I will make them again & play around with other ingredients. Thank you.

Peach Pie

I used this recipe for the first time making a fresh peach pie. I used my mom's homemade pie crust recipe that I have been using for 35 years! I thought it was great and my husband became mesmerized from it!! He said to me, "what are you doing to me!!" Next time I am going to try the suggestion with the brown sugar.

Flax and Sunflower Seed Bread

I liked this bread very much but found it for my taste a little too sweet. i love flax seed so I added a few more. it raised beautifully then the center "fell" in a bit...so not know why but the taste was nice anyways! Will make it again with less honey.

Classic Peanut Butter Cookies

I actually give this a 4 1/2! Great cookies, everyone loved them. The first time I made them exactly as the recipe called for. The second time I omitted the salt and added some chopped salted peanuts....this was really yummy!

Scalloped Potatoes and Onions

I really loved this recipe. For years I have used my mom's traditional recipe with whole milk but the idea of using broth I really liked. Since I am a vegetarian I used vegetable bouillion and the taste was great. I also used the suggestion to add some fresh garlic...oh, and the leftovers were even better!! Thanks!

Nut Burgers (Vegetarian)

I give this recipe a 5, but I made several changes to add more nutrition & flavor. I used only 1/2 can garbanzo beans and added another 1/2 cup of lentils. PLUS, 2 cloves finely chopped garlic, 1/2 green bell pepper, chopped

Quinoa Tabbouleh

I give this one a 4 1/2!! Excellent using the quinoa-much better than the chewy bulgur...the only thing I did different was to add one vegetarian boullion cube to the boiling water dissolving it before pouring it over the quinoa. I also added some fresh ground black pepper. Great recipe!! My husband loved it too!!

Moroccan Lentil Soup

I agree with many of the reviews, I found it rather bland. If you want this to be truly vegetarian, do not use the chicken broth, but vegetable broth, I did this and added 2 more cups of water since I did not want a stew, but a nice soup. I doubled the carrots and celery & I only blended 1/4 of the recipe, since I would rather have the nice pieces of carrot and celery! I did not use as much cayenne since I think this is a rather harsh spice, but I added abit more cumin & a special mixture of Moroccan and Indian spices I found at the open market in Den Haag, Netherlands... and FRESH chopped coriander just before serving. The leftovers I found better...a tasty soup for the chilly autumn and winter nights! I will make it again...very nutritious!

Easy and Good Honey Mustard Salad Dressing

Very simple to make and tasty.. however I agree that it is way too sweet-cutting down on the honey and abit more mustard is a good tip.

Best Potatoes Ever!

I cooked an all Indian dinner for me and my husband last week. We both love the flavours from India, and living in the Netherlands we have several excellent Indian restaurants nearby. Since I lost my job one month ago unexpectedly, I have time now to enjoy my passion for cooking ethnic food. We loved these potatoes! I can handle much spicier food than my husband, so I cut down on the spicier items...I do not think it was necessary...my husband would have liked the potatoes a little less dry...will try perhaps the suggestion of peanut oil next time. OH! I found the mango powder at at specicialty shop only 4 blocks from my house!! Curious to see how it is next time! A real winner recipe! Thank you...

Indian Chicken Curry I

My lovely wife surprised me with this indian dish and... it was delicious. She would have liked it a bit spicier, though. I thought it was great. She served it with indian green beans and basmati rice. The mustard seed goes wonderfully with everything.
