Classic Chicken Noodle Soup

Wow. Just wow. I am truly amazed that I can make such a delicious, rich, satisfying homemade soup in less than 2 hours. I omitted the peas, kept the noodles seperate & only used about 1/3 cup parsley. Otherwise followed directions as written. BIG hit with the kids, husband, everyone! Thank you!

Turkey Potato Casserole

Wow! This was way better than I thought it would be! It sounds bland but everyone loved it & it was devoured by my picky family. I used broccoli instead of green beans & added a can of mushrooms. Also I did not add the cubed cheese but layered extra grated cheese over the onions. No additional spices, however I did have very good homemade garlicky mashed potatoes so that might have made the difference.

Lasagna Toss

Very good! I had a craving for lasagna but wanted something quicker. This fit the bill. Kids loved it. I used one box of penne pasta and a jar and a half of pasta sauce. Made great leftovers and it was very easy to make!

Green Shell Salad

Just made this for a neighbor potluck dinner and it was good! Something a little different, had sort of a creamy pesto flavor. I used sour cream instead of yogurt, added extra garlic and added a little fresh oregano along with the fresh basil from the garden. I tasted it before adding the parmesan, and I thought it could use the flavor kick (plus I love parmesan cheese), and it definitely added flavor (freshly grated of course).

Corn Dip II

This was a big hit at my get together! It was very hearty. I added a little more lime and cayenne, and used regular corn. Next time I would use finely shredded cheese. EDIT: I have made this many times, and you MUST use the Mexicorn or at least add a can of chopped green chilies. It definitely makes it tastier. I use finely shredded cheese, usually sharp cheddar and Monterey Jack. ALWAYS a hit!

Fried Rice Restaurant Style

Great texture! I toasted the rice in a dry pan for 5 minutes, cooked then cooled on a large cookie sheet. Followed the recipe except used double the eggs and used chopped cooked pork, red pepper and green onion instead.

Best Tuna Casserole

Everyone in my family that likes this kind of dish loved it. It's not for everyone. I used 2 cans of cream of mushroom soup and 1 can of cheddar cheese soup. Instead of the peas, I added 1 can of artichoke hearts that I quartered.

Pesto Sauce

Absolutely delicious! Makes a lot of sauce. I used 3 cups PACKED basil leaves and didn't change the other proportions at all and it came out perfect. Definitely toast the nuts. This is a great recipe!

Really Creamy Fettuccine Alfredo

This is the easiest Alfredo recipe I have tried and it is delicious! I added another 1/2 c milk and it was plenty of sauce for a pound of fettuccine! Next time we will add chicken, maybe mushrooms, then try bacon...the possibilities are endless!

Faux Jerk Chicken

Interesting flavor! Brought it to a neighbor's cookout and everyone loved it, even the teenagers. I left out the chili pepper and I think next time I will be sure to include it - it wasn't spicy at all.

Greek Spaghetti II

This was okay but it needed something to give it some more flavor. I only used 3/4 cup of cheese and fresh oregano, which I htink made a big difference. I will make it again, however I will add some garlic to the butter like someone else suggested. It was a fine side dish for our pork roast.

Cowboy Casserole

Hearty & delicious! I took other reviewers advice and baked in the oven til the biscuits were brown, about 20 minutes. Topped with grated cheddar and sour cream, it turned out great! I also added some chipotle seasoning for a kick. Can't wait to go camping so we can try this recipe outdoors!

Golden Chicken Tenders

I used 1.5 lbs frozen chicken tenderloins, one box crushed stuffing mixed with 1 stick of butter, and sprinkled chopped onions over. Baked covered with foil for 40 min, then uncovered another 10. DELICIOUS!

Oregon Salmon Patties

Good flavor! I followed other poster's advice to use no liquid from the salmon. Instead, I added 2 tbsp of lemon juice. I also used Old Bay seasoning & garlic instead of the seasoning indicated in the recipe. Chilling the patties for a half hour helped prevent them from falling apart, but they were still a little crumbly. I fried them in the same pan I had sauteed the onions in for extra flavor. I would make these again!
