Vegetarian Gravy
I agree with the other reviews that it is a bit salty, but so was my mom's meat gravy (from what I remember from when I was eating meat). I was very excited to find something I can use on mashed potatoes, Yorkshire pudding, rice, etc. variations: I don't have any nutritional yeast, so I left it out. It worked fine and was very tasty without it.

Watercress Soup
We found fresh watercress at a farmer's market and were looking for something to do with it. I like anything with potatoes, so we tried this. It was very tasty. Watercress doesn't have much flavour, but we compensated (see below) and it was a very nice addition to dinner. variations: we used a little more salt and pepper than was called for, and also vegetable stock (I'm vegetarian).

Hot Breakfast Couscous
I don't usually like to review a recipe unless I've made it at least once as it's written. But people seem to be critiquing the idea, rather than the specific flavours, so I'm going to break that rule. I think this is wonderful. You can't be expecting oatmeal with a different texture; you have to be expecting a totally different breakfast. It probably also helps to like couscous -- a lot, which I do. I would really recommend trying it, especially if you like hot cereal in the morning. variations: I used chopped dried apples and walnuts and added them after about two minutes of the five, so that the apples reconstituted a little. I poured a little maple syrup and vanilla soy milk (I made it with regular skim) over the top once it was cooked.
