Potato Salmon Patties
It was a great starting recipe! I didn't have any dry potato flakes, so I used panko instead. I also added 1 Tbs of balsamic vinaigrette, just because I thought it'd give it some more flavor. Oh, and I had to baked some frozen salmon since those were the only kind I had. The husband thought it was excellent! :) It was easy to make, but fancy enough for guests! I also made a dipping sauce with mayo, sweet relish, and some Sriracha sauce - but it really didn't need it!

Strawberry Cake and Frosting I
i just made the frosting part of this recipe without reading the reviews, so it did end up being pretty runny. to thicken it up, i added some whipped heavy cream (w/vanilla, but no sugar) to the original frosting until it was no longer runny and more "frosting" like. it was SO delicious and my 4 yr old daughter & husband (who usually doesn't like frosting) loved it! :) so even though i probably couldn't have used the original frosting since i didn't drain it first, the end result was great and had a very nice strawberry flavor!

Beth's Spicy Oatmeal Raisin Cookies
i have to warn you that these cookies are dangerous... i don't usually like oatmeal cookies and i still can't stop eating them!!! i used 1c butter (didn't have shortening), 2/3c dark brown sugar (again, didn't have light brown sugar), 1c dried cherries (hmm, maybe i should go to the grocery store before i start on a new recipe - didn't have raisins!), and added 1c of white chocolate chips. holy cow they're so good!!!
