This is an excellent cake, moist, spicy & flavorful. A note to those who haven't made carrot cake before (like myself): make sure you either grate carrots into very fine, short strips using a box grater, or use a food processor! Silly me, I used a regular hand peeler thinking the pieces would be small enough, and ended up with stringy carrot cupcakes :(. Still tasty, but weird! I also used Cream Cheese Frosting II (made with neufchatel cheese) and it was wonderful.
