White Chocolate Orange Cookies

So good! If you like white choc, you'll love these. I had no trouble zesting the orange; just use a box grater and rub the orange on the side. I made one change, using 3/4 c brown sugar and only 1/4 c white sugar (my husband and I prefer the "blondie" taste of more brown sugar.) Also left out the nuts. These are like heaven just out of the oven!

Italian Veggie Rolls

This was very tasty. I did leave out most of the mozzarella cheese in an effort to be lower in fat, which made rolling these impossible (the filling just wouldn't stay together inside the noodle. So, I compromised and made a layered-style lasagna instead. Still delicious, even to my meat-lover husband!

Applesauce Bars

So so good. I made these first in a 9x9" baking dish, added raisins & nuts and left them plain (unfrosted or sugared). Also have made them as cupcakes, frosted with cream cheese icing. They are very moist and satisfying, tasting kind of like an easy version of carrot cake.

Moroccan-Style Stuffed Acorn Squash

So good! Made this once as specified (except without garbanzos, didn't have any) and DH liked the stuffing so much that now I make it without the squash as a side dish.

Lentil Soup

Very good. You can use any combo of veggies you want, and once I was low on lentils so I added a can of black beans. Also have sauteed sliced turkey sausage in with the onions before adding veggies & deglazing with broth, and it added a delicious flavor. Have used both red & white wine, both good.

No-Cream Pasta Primavera

Michael's Foccacia Bread

Good & so easy. First time, I followed the recipe except for substituting sugar for honey & omitting the onion (not a fan.) That tasted great! Second time making, I also substituted whole wheat flour for 1/2 the flour specified. Tasted wonderful this way as well, the whole wheat was a nice change.

Best Carrot Cake Ever

This is an excellent cake, moist, spicy & flavorful. A note to those who haven't made carrot cake before (like myself): make sure you either grate carrots into very fine, short strips using a box grater, or use a food processor! Silly me, I used a regular hand peeler thinking the pieces would be small enough, and ended up with stringy carrot cupcakes :(. Still tasty, but weird! I also used Cream Cheese Frosting II (made with neufchatel cheese) and it was wonderful.

Cream Cheese Frosting II

Super easy to make, and tastes delicious! Very smooth, creamy & cream cheesy. I used Philly neufchatel cheese instead of cream cheese to save some fat, and it was still wonderful.

Pesto Chicken Florentine

Yummy dish! Very rich, creamy & delicious. I used alfredo sauce from a jar and freeze-dried garlic instead of fresh, and added in some other Italian seasonings (oregano, basil, thyme). It was quite easy to put together, and made a satisfying meal with some veggies on the side.

Tuna Mushroom Casserole

Tasty, easy recipe. Tuna & mushrooms together have a nice, homey flavor. As others suggested, I reduced the breadcrumbs to about 1/2 cup, and also stirred shredded parmesan cheese into the tuna mixture. This added a lightly cheesy, savory flavor to the dish.

Cherry Cheesecake

My family has also been making this for years! One tip: recently I made this with non-fat sweetened condensed milk and it took 5 days to set properly. Still tastes good, but if you want it to set in a reasonable amount of time, you must use the regular version.
