Sicilian Ricotta Cheesecake

OK - my take on this one with slight modifications for those watching their calorie intake. I didn't have enough ricotta - so I "3/4" the recipe. Strange, but it worked. I used part skim (I know some advised not to, but I took the chance bcs I didn't have anything else and hubby wanted dessert) I did not take the time to drain it and it came out fine. I used GV's sugar blend to cut the sugar down. I didn't have orange but used lemon zest instead. I forgot the salt but didn't miss it, really. If you are looking for a cheesecake taste, you won't find it here. But for a light dessert that is not too sweet but satisfying, this is the dessert for you. I cooked it at 350 for an hour and 15 and it could have cooked for less time. The consistency was slightly grainy because I hand mashed it. (TV was on and I didn't want to use the blender.) But it didn't really distract from the over all experience. I thought it was good and was happy with the results.

Honey Mustard Grilled Chicken

Very good. I followed others advise and used Worcestershire Sauce. They came out great. I used our in house, stove top grill and they were delicious! Thanks for sharing.

Oven Roasted Red Potatoes

The "potato" man in the house, (my husband), thought these were outstanding. He would have liked them crisper, however and he usually cooks his potatoes at the highest temp the oven will go. I followed the recipe and thought they came out perfect. I didn't cook them as long, though, because I used the smaller red potatoes and cut them into quarters. They were great. Thanks

Easy Cajun Grilled Veggies

Very good. Funny thing is, my hubby ate some while they were marinating and thought they were good like that. (Actually, he only liked the yellow squash, not the zucchini). I left them marinating over night and they could have had more. I grilled them on a stove top grill my folks bought us since we don't own a grill and they were delicious. Thanks for sharing.

Good For You Macaroni and Cheese

Great recipe. My husband does NOT like chick peas and found the recipe printed out on the kitchen table. However, for anyone dubious about them, you cannot even taste them, so DO NOT let that stop you from making this very yummy dish. I followed the directions exactly and used portion sizes of 1/16, which was PLENTY to eat. I can't imagine eating more for a single serving. I portioned it all out and am going to freeze my pieces to save as a Friday night treat instead of pizza. My husband, however, LOVED it and wants to eat his until it's all gone. : ) Thanks so much for sharing.

Black Bean Brownies

I anticipated a chewier brownie so my husband and I were somewhat disappointed. They also needed something more to give it a more "brownie" taste. I did leave out the coffee because we don't have any and might try that the next time to help bring out the chocolate flavor as another reviewer suggested. For a low calorie dessert, however, they were not that bad. I don't know if I would call them brownies, maybe the name brought about some of the disappointment.

Peanut Butter Chocolate Pudding

Outstanding. I followed as is and it was delicious. My dad is diabetic and was hesitant to eat this because it looked like it was loaded with sugar. I didn't use the chunky peanut butter, but plain and it was very good.

Cheese Cake Cups

This is very good and easy. I changed some things to lower the calories. I used fat free cream cheese and crushed fat free graham crackers instead of using the vanilla wafers. I used the same amount of sugar and halved the recipe and it was delicious and easy. Thanks for posting.

Army SOS Creamed Ground Beef

I made this because I've always heard about SOS but have never had it before. I must say, it is quite strange. But I found it to be very good and very filling. Took a bit longer than 10 minutes to absorb the flour and get as thick as I liked. But it was worth it. Definitely not something you serve to guests. LOL

New Year's Day Black-Eyed Peas

Very good but needs some more flavor. I used two cans of stock and two cans of black eyed peas instead of dried. I didn't add quite as much ham, maybe only half. The thing that did spice it up was a small can (I believe 8 oz.) of crushed tomatoes and chili peppers.(The kind you would put in a salsa) It added quite a zing but was delicious. I used that instead of the whole tomatoes. Kept the onions, too. It was still a bit "soupy" but was good. Definitely needed corn bread as others suggested. Made it with Golden Sweet Cornbread from this site. Very good meal. Thanks!

Creamy Pasta Bake

Very good but not as creamy as I would have liked. But to be fair, I think I used too much pasta (I don't always measure and didn't have the pasta in a box but a baggie). It probably deserves a 5 star. It did make TONS and is good and fairly inexpensive for college students and anyone. Will half recipe next time and use less pasta to achieve the creaminess we desired.

Healthy Banana Cookies

Sorry, but made as the recipe states, I thought these left a strange taste in my mouth. My husband, who said he has never had a bad cookie, won't even eat them. It seems those who did like them "doctored" them quite a bit.
