Coconut Jerk Chicken

I enjoyed, and my husband loved. I made my own jerk seasoning using a recipe on this site (but substituted fresh thyme b/c I had in my garden). I used fresh tomatoes, green onions and chives from my garden too. (Chives b/c this recipe finished off the remainder of my green onions for the year...) Used chives for garnish.

Delicious Raspberry Oatmeal Cookie Bars

Great summer picnic dessert! I've tried both raspberry preserves and mango/passion fruit preserves, and both batches turned out great. I'm sure I'll be making using other fruit preserves as well.

Oatmeal Chocolate Chip Cookies I

Very simple & tastey recipe. I do make a few minor changes. (1) sub 1/2 cup softened butter and 1/2 cup shortening for 1 cup shortening; (2) Only 3/4 ts salt (b/c I used salted butter); (3) 1 ts vanilla. The cookies come out best when I refrigerate the dough first (b/c of the butter). I've made these 3x now.

Christmas Breakfast Sausage Casserole

I've made this recipe twice and changed a little bit each time. VERY good base recipe that allows for easy modifications. I personally prefer extra eggs and a little less milk.

Gnocchi with Pesto Sauce

Excellent. Didnt have zucchini and pine nuts, but the remaining ingredients go together great. I used grape tomatoes and mini sweet peppers (red, orange and yellow) and sauteed the grape tomatoes (halved) for just a couple minutes.

Middle Eastern Rice with Black Beans and Chickpeas

Very good! I will be making this again. I used curry and added a little extra coriander and cumin. Also added cilantro and some yogurt on the side. Did not use pine nuts or parsley, as I did not have those on hand.

Chinese Chicken Fried Rice II

Very good. I use left over pork tenderloin instead of the chicken, add some frozen peas and carrots, and add an extra egg. I also use a red onion, as the red, orange and green add a nice color to the plate. Everyone enjoys it, so I make it pretty often.

Quick and Easy Tuna Casserole

Needed a quick and easy meal. Had to substitute based on what I had. Used green onions instead of yellow onion, sharp cheddar instead of american, cream of chicken instead of mushroom, and solid white albacore. Also added a little milk. Still turned out tasty. I will make again in some form or another.

Taco Lasagna

Very tasty - my husband, 2 yr old son and I all enjoyed. I used corn tortilla chips to give it some crunch. I made my own taco seasoning. UPDATE: Made a second time as per the recipe. It was still very good, but I prefer using the chips for the extra crunch. My husband requests this meal become a regular.

Black Bean and Couscous Salad

Very good. I substituted one can of kidney beans for one of the cans of black beans. I also added extra couscous and broth since I wanted to use the whole 10z box of couscous and 14 oz (2 cup) can of broth. I doubled the ingredients in the dressing. UPDATE: Made a 2nd time and substituted chopped steamed baby carrots for the red pepper. Otherwise, I did the same as I mentioned above. Very good again. Toddler and husband prefer the baby carrots. I like either way.
