Super Shrimp and Veggie Pasta Salad

This recipe was very easy to make turned out really good. I didn't have the peppers so I substituted shredded carrots and yellow squash. The tang of the dressing was just right.

Chicken Paprika

This was fantastic and easy. I used frozen chicken breasts, so I followed the suggestion to double the cooking time and it turned out just right. Also, I thought I had paprika on hand but when I went to add it, I couldn't find it. I used chili powder instead (only 1 tsp) and omitted the hot sauce. It was SO good and not too spicy.

Tortilla Casserole

This tortilla casserole tastes great, plus it's really easy and is all done in your microwave. It turns out nice and spicy, so temper it to your tastes. My family loved it.

Cashew Caramel Bars

These taste okay, but not very caramelly. The dough for the crust was very wet; could not be "pressed" into the pan. I felt they needed something, so I sprinkled chocolate chips on top and returned it to the warm oven to melt. Once melted, spread the chocolate around with the back of a spoon. As a whole these turned out more like a cookie bar than a candy bar.

Spence's Pesto Chicken Pasta

This was pretty good, but didn't stand out as amazing. I did not have the roasted red peppers so I left that out. Also, I used canned mushrooms instead of fresh, using the liquid from it to cook the chicken. I think it worked out well so the dish wasn't dry. I was happy the kids liked it even though it had lots of interesting vegetables.

Clark Gable Pancakes

There's something about the way these pancakes made my mouth feel after eating them. Dried out. Maybe it was the 2 T baking pwd. They tasted good going down, but I won't make them again.

Garlic Asparagus with Lime

The asparagus tasted great, and the lime was a welcome kick. Used a green onion instead of a shallot and it worked well. I covered the asparagus once it was added to the pan to help the cooking and it turned out just right.

Bananas Foster Chimichangas

This dessert went perfectly with my Cinco de Mayo party. I made the chimichangas up before my guests arrived and just fried them up when we were ready to serve them. They were delicious with vanilla icecream (the icecream tempered the sweetness of the bananas foster).

Peanut Butter Brownies I

I'm always on the lookout for a good dessert recipe since my DH is allergic to chocolate. This was great-- had the richness of brownies just with peanut butter. I followed the recipe except I used crunchy PB so I left out the extra nuts. I'm sure it would be great with choc chips. The photo really is not right; the brownie shown is chocolate.

Easy Chicken Satay

Stove Top Tamale Pie

Fantastic. My husband and I ate this all in one sitting. I added a can of corn, sliced olives, and 1/2 can green chilies. Since we have MSG allergies, I always do my own taco seasoning (chili pwd, cumin, beef bullion, tomato pwd, minced garlic, chopped onion) and it still had a really good Mexican flavor.

A Jerky Chicken

Delicious and easy to make. I doubled the marinade recipe so I'd have extra sauce. I left out the habanero since I didn't have one, but next time I think I'll use a few drops of tobasco instead. Served it over white rice.

Corn, Sausage and Pepper Chowder

It was pretty good. I felt like it needed more seasoning, maybe more cumin or some celery or something. But the taste was good. My kids (all under 8) liked it except for the peppers.

Cold Oven Popovers

I made two batches about an hour apart, so the oven didn't have time to cool completely between. The second batch puffed up much better, and I think it was because the oven was already kind of warm. The taste was great, though much better hot than once they cooled off.
