Quinoa and Black Beans

First time cooking quinoa, and I'm so glad I found this recipe! I'm going to add avocado and eat this for lunch. I think next time I'll try it in a burrito. Yum!

Creamy Spinach Tortellini

I thought this dish was quite rich, and lacked a bit of flavor as written. I'll probably make this again, but will use neufchatel cheese instead of cream cheese and will add some seasoning for more flavor.

Artichoke Chicken

I really enjoyed this chicken! I took the advice and used more sour cream than mayo (I halved the recipe and used 1/4 cup sour cream and 1/8 cup mayo). I recommend using shredded Parmesan cheese.

Artichoke Mashed Potatoes

Delicious Ham and Potato Soup

Chicken Pot Pie IX

Chicken Pot Pie is comfort food to me, and now I don't think I'll ever buy another frozen one again! Even though I forgot to put add the peas and forgot the salt in my pie crust (bad night for reading a recipe I guess), it was soooooo good! I cooked the veggies and chicken in chicken broth, then reserved it for the sauce. I halved the recipe (except for the sauce) and made two pies in ramekins. I'll be able to freeze one for the next time I need a little comfort.

Cream of Broccoli Soup I

Great soup! I think next time I will process all of the broccoli for a less chunky texture. I did add extra cheese, and mixed it in while still over heat. A little bit of salt and it was fabulous. Definitely will be in my "comfort foods" file!

Lime Muffins

I really enjoyed the taste of these muffins, but the texture needs tweaking. The batter was really thick, and I think this made the texture quite dense. I used buttermilk instead of milk (not sure if this was what made them dense) and had to add more milk and oil. Seemed like there wasn't enough of the wet mixture for the dry mixture. I will try these again with some adjustments.

Cinnamon-Topped Rhubarb Muffins

Wowza! I love these muffins. The sweetness of the cinnamon-sugar topping and the tartness of the rhubarb is a fabulous combination. They are moist and light and just perfect! The only thing I might change is to add more rhubarb next time.

Garbanzo Bean Chocolate Cake (Gluten Free!)

I made this recipe as cupcakes for my gluten-intolerant friend's birthday. What a hit! The texture was more like that of brownies, but less dense. And the taste was amazing! I was somewhat skeptical about the garbanzo beans, but now I'm sure I'll be using this recipe again - for myself!

Easy and Elegant Pork Tenderloin

Really easy and super tasty! I slathered mine in a zipper bag with olive oil, salt, lemon pepper, and garlic, then browned in a skilled before breading. I'll probably be making this on a regular basis. I can't wait to experiment with different herbs and seasonings in the breading mixture!

The Best Rolled Sugar Cookies

Stop searching - this is the only sugar cookie recipe you will ever need! Wonderful sugar cookies! Exactly what I want from a sugar cookie - perfect taste. I rolled mine too thin so they came out too crispy, but I will cut thicker ones next time to get a softer and evenly colored cookie. I refrigerated the dough for 24 hours before rolling, and found it very easy to work with. I could pick up the cut-outs and they didn't break or stretch. I have a feeling I'll be using this recipe for many occasions in the future.

Sugar Cookie Icing

Excellent icing recipe!! I only added 1 teaspoon of milk (to make three) and found the consistency perfect for painting on the icing. I used 1/4 teaspoon of lemon extract instead of almond, and I found it a tad too lemony, so will reduce it slightly next time, or try vanilla. The icing dried with a nice shiny finish, and didn't dent when stacked. I don't think I'll ever try another icing recipe!

Lower Fat Banana Bread II

This is a very good bread. I added a third banana and I think it could still use a little more. I used a tablespoon of applesauce instead of oil, and light sour cream instead of milk (which could be attributed to the lack of banana taste?). I also added 1/2 teaspoon ground cinnamon. I will definitely use this recipe again!
