Kale, Quinoa, and Avocado Salad with Lemon Dijon Vinaigrette

This is a great recipe. I kicked it up a notch and added some fresh ginger & curry powder to the dressing. I love avocado but it didn't bring anything to this recipe so omitted the second time around.

Raspberry and Apricot Rugelach

Want something easier, faster and fewer calories & cookies? Buy a tube of Crescent "Rounds" Original. (These are strips not triangles of dough.) Downsize the filling recipe (I kept it pretty close to what it called for and really packed each cookie with filling). Separate and spread the dough pieces out on greased parchment paper laying on a cookie sheet. Follow the recipe, loading the strips up with preserves, followed by the nut, apricot, sugar mixture. Roll them up and lay flat on the parchment paper. If the filling falls out just put it on top, brush with milk and sprinkle with brown/white sugar. Bake at 325 degrees for approx. 20 minutes. Yummy !

Taco Seasoning I

Thank you for this recipe. I have several recipes calling for "taco seasoning" and have always used the store bought packages. They have way too much salt for me (and chemicals). I followed this recipe but added a little less salt. It was excellent in my lentil and mushroom tacos.

Spicy Korean Red Pepper Cucumbers

I'm not an authority on Korean food but I do love cucumber with vinegar. I followed the instructions the 1st time, all except for the Korean Hot Sauce, couldn't find it so used chili paste. I backed off on the chili paste, 2 tsp from 2 Tbsp; that had plenty of 'zip' for me. The next time I used only 1 Tbsp of sesame seeds & bumped up the sesame oil to 2 Tbsp and added 2 onions.

Magnifico....Instead of using lemon juice and peel I used lemon infused extra virgin olive oil along with regular extra virgin olive oil.

Quinoa Tabbouleh

I had to write a review on this recipe. I've been making it for a couple of years but have recently stopped eating meat & rediscovered how much I LOVE this recipe. Sprinkle with a little feta and wrap it in a whole grain tortilla. Yummy!

Bacon Ranch Pasta Salad

The 1st time I made this salad I followed the instruction only I added fresh garlic instead of powdered. The 2nd time I made it I used shaved chopped ham instead of bacon and cut the shredded cheddar in half and added crumbled Feta. I also chopped up a little fresh basil and a few thinly sliced green onion tops. I got good reviews.

Quick Hoppin' John Soup

Literally used what I had on hand. Three qtr. lb. of "Hot" sausage and diced up 4 smokey breakfast links. Zatarain's yellow rice mix and frozen black-eyed peas went into the pot. Used mostly chicken broth but the soup was still too thick so kept started adding V-8 Spicy Hot till the consistence I desired....Yummy !

Chicken Curry II

I sauted fresh chopped garlic and ginger root with cubed boneless, skinless chicken breasts which made for a much quicker dish. I omitted the raisins. It was delicious.
