Healthy Coconut Oatmeal

This would probably also be excellent with some banana and/or pineapple. I couldn't taste the maple syrup (used 1 tsp for a single serving of oats) so I'd probably just skip it entirely next time. The fruits lend plenty of flavor anyway. A nice variation for morning oatmeal!

Roasted Carrot Salad

Delicious! I tweaked this recipe by using 1 lb of carrots, 1 lb of Brussels sprouts, only 1 T of olive oil, doubling the garlic, and halving the blue cheese. I'm a serious blue cheese lover but any more than that and it would have been completely overpowering. I also used half baby arugula and half baby spinach and replaced the vinegar with OJ.

Maple Glazed Sweet Potatoes with Bacon and Caramelized Onions

This was absolutely delicious! I could have eaten all four portions that I made by myself. It's going to become a standby side here in my house. I modified this recipe to cut the calories by 180 per serving (just 107 calories a serving) and cut the fat by 6 g per serving. Changes I Made: For four people I used 1/2 lb sweet potatoes, 1/2 lb baby carrots, 1/2 a large onion, 1-1/2 slices of center cut bacon, only 1 tsp of olive oil (more than enough), and 2 T of lite syrup, plus 3/4 tsp thyme. I skipped the salt entirely because of the bacon and added plenty of black pepper.

Fudge Puddles

I made 22 cups in a regular-sized muffin tin. I used a nonstick pan and spritzed each up with Pam before filling and had absolutely no issues at all with sticking. I used a shot glass to press down the centers. I used my regular cookie scoop to measure out the amounts and had exactly 22 cups and used all of the fudge perfectly. This recipe is dangerously addictive delicious!

Roasted Brussels Sprouts

Absolutely delicious and simple! I halved mine and roasted for about 30 minutes. They were very nicely browned at that point and tasted crispy and nutty.

Balsamic Chicken

I marinated the chicken for about an hour. The only change I made was using brown sugar in place of the white sugar and Garlic & Wine Seasoning in place of the Italian. We grilled the chicken and I reduced the marinade until thickened and drizzled over roasted asparagus and Roma tomatoes.

Juicy and delicious! I also just sprinkled brown sugar on top and let it melt in with the heat of the chops because I had other things in the oven and couldn't use the broiler.

Cheesy Ranch Potato Bake

Absolutely delicious! This was a huge hit with our family of 8. I added 2 cups of cooked green beans and 3 slices of cooked crumbled bacon at the end with the cheese and ranch. I used the Ranch Dressing II recipe in this as well as Pepper Jack cheese.

Avocado Salsa

Absolutely delicious! This tastes wonderfully fresh and light. I added a can of rinsed black beans and 2 chopped Roma tomatoes as well. I used Kalamata olives in red wine vinegar and 1/2 of a small red onion and left out the red pepper. I also substituted fresh lime juice for the lemon because I like lime with avocado.

Clark's Quiche

Absolutely delicious! I agree with the reviewer that suggested pre-baking the crusts for a few minutes to avoid mushiness. I used fat-free and low-fat dairy products for this recipe to cut fat and calories and it was still absolutely amazing. I used Portobello mushrooms and otherwise followed the recipe exactly as written.

White and Wild Rice Pilaf

I used a brown/wild rice blend for this dish and toasted the rice with the onions and garlic. I added a little rosemary as well, but it was still very bland. However, this worked well as I served it under Grilled Adobo Chicken and drizzled with the sauce.

Broccoli with Garlic Butter and Cashews

Delicious! I only used 2T butter and substituted chopped walnuts for the cashews. I used lite soy sauce and frozen broccoli. I also added about 1 tsp of freshly grated ginger. Next time I plan to try this with cider or balsamic vinegar instead of white. The broccoli had a ton of flavor.

Grilled 'Fusion' Pork Chops

I used 3 limes and 1 lemon to make double the marinade (for double the chops). I did not use garam masala as I didn't have it on hand. I used fresh minced garlic and ginger, and we grilled them. These were hands-down the juiciest and most tender chops I have ever eaten. They practically melted in your mouth. This is a definite keeper!

Big Al's K.C. Bar-B-Q Sauce

Awesome sauce! I was short on ketchup (only 3/4 cup) and was out of tomato sauce. I added an 8-ounce can of tomato paste to the ketchup and balanced out the thickness by adding Southern Comfort to reach 2 cups (I was splitting the recipe in half). I skipped the vinegar since I added alcohol. I left the spice amounts as-is in the full recipe. When it was done, I took 1 cup of it and added 1 cup of applesauce for Ted Reader's pork chop recipe. Delicious!

Ultimate Shrimp Scampi

This was very good! I skipped the avocado since I didn't have any on hand, but the sauce went very good with shrimp and pasta. I added fresh tomatoes and loads more garlic since we are garlic lovers in this house.

New Waldorf Salad

This was creamy, light, and refreshing! My whole family loved this salad, and the citrus yogurt was a healthy and delicious alternative to the traditional mayo dressing on a Waldorf salad.

Spinach and Strawberry Salad

I subbed balsamic for the white wine vinegar and added chopped pears and toasted chopped walnuts and sliced almonds. I also subbed honey for the white sugar and cut the amount. Delicious!
