Delmonico Potatoes

Reviewed: Oct. 3, 2000
When I first saw this recipe, I thought that it couldn't be that good, it was just too simple. There weren't any onions or spices. Well, I made it anyway because my boyfriend loves hashbrowns, and oh my gosh was it good!!! It was so creamy--it tasted exactly like my mother's homemade au gratin potatoes--EXCEPT 10 TIMES EASIER!! It was very easy to prepare and absolutely delicious. I will definitely make this recipe again--lots of times!

Caramel Filled Chocolate Cookies

This dough was VERY sticky, but the cookies were delicious! My boyfriend would eat them almost as quickly as I could make them!! Definitly worth making again.

Easy Red Velvet Cake

Reviewed: Feb. 24, 2001
I made this for my boyfriend because he loves red velvet cake. It was so moist and yummy-as good as if I had made it from scratch...except ten times easier!!! This one is a keeper for sure!

Pistachio Bread

Reviewed: Jun. 3, 2001
This bread was wonderful! My father loves anything pistachio, and he really loved this. The rest of the family loved it too. I left out the cherries, and it was still great. I have made it numerous times, and it never lasts more than 24 hours!!

Old Fashioned Coconut Cream Pie

Reviewed: Mar. 27, 2004
This was a wonderful coconut cream pie, but I did take some advice from other reviewers. First of all, I used a double boiler over medium heat & stirred with a whisk (it actually does make a big difference in smoothness) & it thickened nicely & didn't burn. I made two pies, both with 2 cups half & half & 1 cup 2% milk, & that was definitely the right decision. But for one pie I used 1/4 cup flour & 1/4 cup cornstarch, & it was pretty good still, but you could definitely taste raw flour. I can't even imagine using just 1/2 cup of flour. For the second pie I used 1/3 cup cornstarch--no flour at all, & it was SOOOO MUCH BETTER. I also used coconut extract instead of vanilla, just to get more of a coconut-y flavor. And yes--use deep dish pie shells. This is a very good recipe, but take my advice & LEAVE OUT THE FLOUR!!! You'll be glad you did.
