Quinoa with Veggies

So yummy and fresh, AND healthy :) I cooked my quinoa in half chicken broth and half water. Used zucchini, mushrooms, peppers, and broccoli. Squeezed some lemon juice in addition to the spices. I also added toasted pine nuts and goat cheese (but it still would have been great without these). So yummy! Thanks :)

Ultimate Irresistible Granola

I made this last night and was very impressed! I've tried several granola recipes and this is the first one that actually worked like I wanted it too. I did change a few things- I omitted the sesame and sunflower seeds and wheat germ. I used flax seed instead of wheat germ. I used extra virgin coconut oil instead of canola- for a more healthy approach. I also used 1 cup of honey and 1/2 cup of Agave nectar. I added a few dashes of salt and cinnamon. I also had to double the cooking time- I had two cookie sheets in the oven. It just wasn't cooking very quickly. Just wait until it gets golden and toasty. Great recipe and VERY easy! Thank you!!

Alysia's Basic Meat Lasagna

The recipe was great... pretty easy to follow. I used cottage cheese instead of ricotta and it worked great. I followed other's advice on doubling the sauce- it would have been dry without. I would recommend using more noodles. Otherwise we loved it!

Colorful Corn Chowder

I played around with this recipe so I don't know if my rating is accurate for the exact ingredients. I added salt, pepper, paprika, chile powder, and red chile flakes to taste. I substituted chicken broth for water. I also added a can of creamed corn and added chopped potatoes(put in microwave first for 2 min). It turned out SO yummy. It was the best 4 days after I made it.

Tasty Lentil Tacos

I think these are delicious, and everyone I've served them to does as well. I do cook them a little bit longer than suggested, but it could be my stove/pan. I've made them three times now, and haven't put in the salsa at the end, and they're still delicious. I think the toppings you put in the taco are key- chopped onion and cilantro, cheese, lettuce, sour cream, guac, and some hot sauce if you like. Delicious! I used white corn taco shells.

Whole Wheat Blueberry Pancakes

This was so tasty and super easy. The only thing I changed was use 1/2 t. of vanilla and 2 T. brown sugar instead of artificial sweetener. Thank you for an awesome WW recipe!

Chocolate Chip Cookie Ice Cream Cake

i made this for my hubby's bday. he loves cookies and cream icecream, so i used that. i also used oreo cookies for the crust. the fudge on the crust seemed much to rich for us though. too much chocolate. so if you do oreos, i would ommit the fudge on the crust. easy to make and tasty other than the richness part.

Ooey-Gooey Cinnamon Buns

This were pretty good- best right when they come out of the oven because they are REALLY gooey! I added about 2 tbs more butter to brush on the top. I also made a vanilla frosting to put on them after they came out of the oven. I rated it a 4/5 because the cooking time is off- or at least for higher altitudes. I baked them at 365 (instead of 375) for 21 minutes and they were pretty brown on top! Bummer....after all that hard work. They turned out very tasty still- I caught them before they burnt! I'll make them again :)

Ginger-Lime Chicken with Coconut Rice

This was a pretty good dish. I really liked the idea of all the flavors together. Some things to note- you should stir the rice once or twice while it's cooking so it absorbs all the coconut milk, or else it will burn around the edges. Don't cook the chicken until it "browns", it will be overdone. The dish is very colorless... I would recommend adding some red pepper flakes, cashews, a lime twist, and/or even cilantro. I really liked the coconut rice. YUM! Also, I would recommend marinating the chicken longer than 20 min for it to soak up that good flavor. I will try this again with those changes.

Chewy Chocolate Chip Oatmeal Cookies

These were really good. They had great flavor (2 t. vanilla). I loved the nuts in them- I used pecans. I got rave reviews from those that ate them. I will make them again. And leave the salt! I love salted cookies- I didn't think it was too much at all.

Restaurant Style Egg Drop Soup

I thought this was much too bland. I added much more green onions and even garlic powder. The texture of the soup and egg were great though. It just was missing something... some spice.

Garlic Chicken Fried Chicken

I couldn't taste the garlic at all in this recipe. The texture/crispiness was good but it was flavorless! I even added extra Italian spices. Next time I would put in 3-4 teaspoons garlic
