Sour Cream Chocolate Frosting

Had a box (yeah I said box) of yellow cake mix that needed to be used up. I decided to make cupcakes and I wanted a quick, easy, not too sweet chocolate frosting for them. I did cut back on the powdered sugar a bit as a personal preference. While this didn't have a very deep chocolate flavor it was certainly quick and easy. I would make this one again. World's Best Potato Salad

We recently had the very best potato salad we had ever eaten at a local restaurant. I rarely make it at home but really was determined to find a recipe we could love as much as the one at the restaurant. Who can argue with a name like "world's best"? I had to try this and I'm glad I did. I made "as is" being this was my first try with this recipe and the only thing I would change next time, and there will be a next time, is a bit less sugar but that is just my personal preference. My hubby has been eating it all day and that is always a good sign.

Sweet Vanilla Cupcakes

FanFreakingTastic! Really these more than lived up to the raves they've been getting. I doubled the batch with great results. I ((blush)) screwed up my first batch by overmixing. Found Marianne on the exchange who advised me to incorporate the flour mixture only until wet....with that advice the next batch looked as great as they tasted. Will make these again and again. Thanks for the recipe and the help Marianne!!

Slow Cooker Buffalo Chicken Sandwiches

Really good! Followed the recipe exactly and wouldn't change a thing. My family really enjoyed and I will make again. I ate mine on a toasted bun with a splash of bleu cheese dressing and some melted cheese. Yum!

Mom's Cucumbers

I usually make cucumbers with sour cream and vinegar but my dad requested a version he remembered having years ago and this seemed to fit the bill. I was thrilled when he said it was fantastic. W all enjoyed this recipe with our abundance of garden cucs. Thank you! I will for sure make it again and again.

Mini Pumpkin Butterscotch Muffins

Fantastic! What a great fall recipe. I did use pumpkin pie spice and due to a senior moment (you can have those at 45, right?) I grabbed peanut butter chips instead of butterscotch but we still enjoyed. I did add some butterscotch chips after I saw the error of my ways. These were quick and easy to make, even with my three year old grandson helping (give me strength). Thanks for a wonderful addition to my recipe collection.

Mini Pumpkin Whoopie Pies

Whoopie! This were the hit of our Thanksgiving dessert table. Wish I had made more. They were simple to make. I made up the cookies the day before and filled the next morning. My whoopie scooper was too big so next time I will scoop less whoopie to get them more mini. I did use pumpkin pie spice rather than the individual ginger and cinnamon. For sure will be making whoopie ((pies)) again and again.

Fruity Sweet and Sour Sauce

Shrimp Appetizer

This was a big hit on our Christmas Eve appetizer buffet. I left out the green onions as a personal preference and used a shredded cheddar mix instead of mozzarella because that is what I had on hand and also added chopped crab meat. Served with Ritz.

Thumbprint Cookies IV

These are, hands down, my favorite Christmas cookies. Light and buttery and not overly sweet which makes filling them with tinted sugar cookie frosting perfect. I don't think the egg white dip is necessary if your nuts are chopped finely enough, especially if using walnuts which are fairly moist after you chop them.

Creme Brulee Cheesecake Bars

Sinfully good and super easy. Cooling on the counter as I type and I had to taste test! I put toffee pieces only on half as many reviews said they tend to get soggy. This looks to be a great dessert for our New Years Day dinner. I love the cookie crust and did press it a bit up the sides.

I've attempted several yeasts breads over the past year with moderate success but I'm not a very patient person so this bread was perfect for a cook like me. I love the texture of this bread as well and will, for sure, make it again.

Candied Kielbasa

Made these for a Superbowl party. I was afraid they would be too much like Little Smokies but I was so wrong. These were raved about. I was almost embarassed to tell people how easy they were but everyone was asking! I did cut back on the brown sugar and also baked in the over first before putting them into the crockpot as per many reviewers advice. Thank you for a recipe that was a fantastic crowd pleaser!!

King Ranch Chicken Casserole I

We really enjoyed this and will, for sure, make again. Per many reviews I used homemade tortillas and just tore them apart and layered on bottom of the pan and again on the top of the Rotel/soup mix over the chicken. I omitted the onion per personal taste and used BLSL chicken breast diced up and cooked in some olive oil/garlic before assembling. I don't tihnk the cooking temp/time was right for my oven so next time will bake at 350 for at least 20 mintues. We served w/ rice and will put this in our dinner rotation when I need something quick, easy and tasty.

Lepp's Marathon of Love

My whole family said "this is a keeper"! So will make again and again. I tweeked the smart a$$ness up just a bit as a personl preference. Grilled Asparagus

I'm not sure why but I've only eaten asparagus once before in a risotto. With the abundance of fresh asparagus available right now and the fact I'm trying to eat more veggies I figured it was time to give it a try. This looked like the best way to let the true flavor of the veggie come through and boy did it! I loved it! Awesome, simple, fresh!!

Root Beer Pork Chops

My grill has been buried in an pile of snow 8 feet deep since December. It finally broke free so I was looking for the perfect recipe to welcome it back and boy was this it! These chops were so moist and tender with just the right amount of sweetness. We enjoyed them tremendously. My one complaint? I wish I had made MORE! Chalk this one up to another great recipe from Ken! Please keep the recipes coming!
