Sour Cream Chocolate Frosting

Had a box (yeah I said box) of yellow cake mix that needed to be used up. I decided to make cupcakes and I wanted a quick, easy, not too sweet chocolate frosting for them. I did cut back on the powdered sugar a bit as a personal preference. While this didn't have a very deep chocolate flavor it was certainly quick and easy. I would make this one again. Marinated Pretzels

These were so easy and went over very well at a Supebowl party. I did use vegetable oil as per some reviewers advice. While I love olive oil it does have a very distinctive flavor that I just didn't see lending itself well to such a "snacky" food. I used 1 tbls of both the garlic powder and dill as well, again per reviewers advice. I will certainly make these again and again.

King Ranch Chicken Casserole I

We really enjoyed this and will, for sure, make again. Per many reviews I used homemade tortillas and just tore them apart and layered on bottom of the pan and again on the top of the Rotel/soup mix over the chicken. I omitted the onion per personal taste and used BLSL chicken breast diced up and cooked in some olive oil/garlic before assembling. I don't tihnk the cooking temp/time was right for my oven so next time will bake at 350 for at least 20 mintues. We served w/ rice and will put this in our dinner rotation when I need something quick, easy and tasty.

Shrimp Appetizer

This was a big hit on our Christmas Eve appetizer buffet. I left out the green onions as a personal preference and used a shredded cheddar mix instead of mozzarella because that is what I had on hand and also added chopped crab meat. Served with Ritz.

Creme Brulee Cheesecake Bars

Sinfully good and super easy. Cooling on the counter as I type and I had to taste test! I put toffee pieces only on half as many reviews said they tend to get soggy. This looks to be a great dessert for our New Years Day dinner. I love the cookie crust and did press it a bit up the sides.

Thumbprint Cookies IV

These are, hands down, my favorite Christmas cookies. Light and buttery and not overly sweet which makes filling them with tinted sugar cookie frosting perfect. I don't think the egg white dip is necessary if your nuts are chopped finely enough, especially if using walnuts which are fairly moist after you chop them.

Lemon Cheesecake Squares

Followed the recipe to a T and I really liked these. I did think there was too much of the top layer and will scale that back next time. I used a 12 oz jar of jam and it was perfect for the second layer. I LOVE this crust and will use it in place of graham cracker crust in other recipes. These are on the tart side and though I love that no one else did. I look forward to playing w/ this recipe (using different jams, and perhaps something on the top etc..) next time.

Mini Pumpkin Butterscotch Muffins

Fantastic! What a great fall recipe. I did use pumpkin pie spice and due to a senior moment (you can have those at 45, right?) I grabbed peanut butter chips instead of butterscotch but we still enjoyed. I did add some butterscotch chips after I saw the error of my ways. These were quick and easy to make, even with my three year old grandson helping (give me strength). Thanks for a wonderful addition to my recipe collection.

Robin's Peanut Butter Cookies

Was looking for a very basic peanut butter cookies recipe and while this is pretty basic the cookies were a bit too dry and crispy for my taste. I made the recipe exactly as is being it was my first time making it. May try again and play with it to get more of a crunchy/chewy texture.

Beer Bread II

I've attempted several yeasts breads over the past year with moderate success but I'm not a very patient person so this bread was perfect for a cook like me. I love the texture of this bread as well and will, for sure, make it again.

World's Best Potato Salad

We recently had the very best potato salad we had ever eaten at a local restaurant. I rarely make it at home but really was determined to find a recipe we could love as much as the one at the restaurant. Who can argue with a name like "world's best"? I had to try this and I'm glad I did. I made "as is" being this was my first try with this recipe and the only thing I would change next time, and there will be a next time, is a bit less sugar but that is just my personal preference. My hubby has been eating it all day and that is always a good sign.

Lepp's Marathon of Love

Fruity Sweet and Sour Sauce

Self-Filled Cupcakes I

A really simple and delicious way to spruce up from-the-box-cake cupcakes. Not overly sweet, which is what I was going for. Next time I will leave out the chocolate chips as a personal preference.

Candied Kielbasa

Made these for a Superbowl party. I was afraid they would be too much like Little Smokies but I was so wrong. These were raved about. I was almost embarassed to tell people how easy they were but everyone was asking! I did cut back on the brown sugar and also baked in the over first before putting them into the crockpot as per many reviewers advice. Thank you for a recipe that was a fantastic crowd pleaser!!

Mini Pumpkin Whoopie Pies

Whoopie! This were the hit of our Thanksgiving dessert table. Wish I had made more. They were simple to make. I made up the cookies the day before and filled the next morning. My whoopie scooper was too big so next time I will scoop less whoopie to get them more mini. I did use pumpkin pie spice rather than the individual ginger and cinnamon. For sure will be making whoopie ((pies)) again and again.

Crab and Lobster Stuffed Mushrooms

We love the big chain's mushrooms and while this recipe isn't quite the same, it is a good sub. I agree with other reviews to duplicate the big chain you need diced red pepper and scampi sauce. We all enjoyed these though . I did add some melted butter with some garlic powder whisked in to the top of these about 1/2 way through baking time. I would make these again but will cut back on the amount of croutons next time.

Mom's Cucumbers

I usually make cucumbers with sour cream and vinegar but my dad requested a version he remembered having years ago and this seemed to fit the bill. I was thrilled when he said it was fantastic. W all enjoyed this recipe with our abundance of garden cucs. Thank you! I will for sure make it again and again.
