I’m so freaking antsy.  The sun is shining, we’ve got blue skies, it’s in the upper 30’s (a virtual heat wave after our winter).  Surely the end must be near even if Mother Nature throws us a March snow storm or two. (I draw the line at 3 or any in April).  So my thoughts are… MORE

I'm an ocean lover living in Iowa. Married to my lovey for 28 years, a mother of four (ages 27-19) and grandma to one gorgeous boy (4). Working as a paralegal in a busy law firm so Allrecipes is a great place to take a break.
My favorite things to cook
I love food! I think I'm best at baking but enjoy the challenge of putting a meal together every night, or at least trying to. My hubby is a meat and potatoes kind of guy but I love fish, chicken and pasta. Recently have begun baking bread.
My favorite family cooking traditions
Christmas dinners at my parents and trying to take on some of those cooking duties and learn their recipes, especially my Dad's stuffing. I love making enormous platters of cookies and candies at Christmas time.
My cooking triumphs
The first time I made a fudge that actually turned out perfect. Go figure! I put it on a Christmas tray and took to Christams Eve at my parents and my Dad kept saying that it had to be store bought! To this day when I show up with fudge everyone says "so you've been shopping again!" Also from scratch lasagna and spaghetti and other pasta sauces.
My cooking tragedies
Ha! If I can get through one week without a tragedy I'm calling it good. I'm a twister in the kitchen and by twister I mean toranado and by tornado I mean an F5 blow the doors off this place and by that I mean I make a mess.

Self-Filled Cupcakes I
A really simple and delicious way to spruce up from-the-box-cake cupcakes. Not overly sweet, which is what I was going for. Next time I will leave out the chocolate chips as a personal preference.

Rhubarb Cherry Crisp
Looking for something I hand't tried before to use up the last of my rhubarb. The TANG is what I love about rhubard, so w/ that in mind and after reading the reviews, I left out the almond extract as I was afraid it would make the cherry layer too sweet. The only other change I made was to make extra topping as we like the crunch layer to be fairly thick. The combo of rhubard and cherries is wonderful. But next time I will simply use two cans of the pie filling and skip making a syrup w/ it and adding extra sugar, I think it just took too much of the tang out of this for me.

King Ranch Chicken Casserole I
We really enjoyed this and will, for sure, make again. Per many reviews I used homemade tortillas and just tore them apart and layered on bottom of the pan and again on the top of the Rotel/soup mix over the chicken. I omitted the onion per personal taste and used BLSL chicken breast diced up and cooked in some olive oil/garlic before assembling. I don't tihnk the cooking temp/time was right for my oven so next time will bake at 350 for at least 20 mintues. We served w/ rice and will put this in our dinner rotation when I need something quick, easy and tasty.
