These waffles are delicious. I made three changes. I left out the butter and used Greek yogurt instead. (The spray I use on the waffle iron is more than enough oil so that the waffles come off clean.) I also separated the eggs and beat the egg whites until stiff, then folded them into the waffle mixture as my last step before cooking. Also, I substituted 1/2 cup of white flour for whole wheat, which didn't make a difference in the flavor, but made it a little healthier. I also would recommend adding a little extra sugar or Splenda.
