Sopapilla Cheesecake Pie

Unbelievable! The only thing wrong with this recipe is the cooking time - I had to cook it twice as long as noted in the recipe. It is absolutely heavenly.

Salsa Chicken Rice Casserole

I increased all ingredients, used 2 chicken breasts and 4 thighs which I sauteed in butter with the onions, made it in a larger casserole dish, used one package of pecan brown rice and 1 bag of Success rice, added a small can of green chili peppers, and used medium rather than mild salsa . . . didn't need to increase the cheese as 4 cups is plenty . . . very yummy!

Debdoozie's Blue Ribbon Chili

I used 2 1/2 lbs. of hamburg, a little more onion, added one 4.5 oz. can chopped chili peppers (drained), 1 1/2 15 oz. cans tomato sauce, and 2 can of canellini beans in addition to the red and light red beans (I drained all the beans), and 2 envelopes of Ortega reduced sodium chili mix. Served with with a little grated sharp cheddar sprinkled on top, and sour cream and chopped green onions. SOOOO delish! YUM!

Easy Key Lime Pie I

Really delicious! I had no implement to squeeze the key limes (tiny little buggers!), so I did it by hand, a WHOLE BAG, and my fingers were sore by the time I finished . . . but it was worth it! Other than the lime squeezing, this was sooo easy! I will buy some sort of device to do the squeezing before I make this again which will be soon!

Grilled Garlic Parmesan Zucchini

Excellent! I used a combination of zucchini and summer squash, added some red bell pepper slivers and slivered shallots. Broiled it for 2 or 3 minutes at the end to brown it.

Easy Garlic-Lemon Scallops

Wonderful! I cut WAY down on the butter and added a little olive oil, heated to very hot, added the garlic, then the scallops, and fried the scallops about 3 mins./side. They browned beautifully! Removed the scallops to a covered plate, added about 1/3 cup of white wine, reduced it, added lemon juice, pepper, and about a half tsp. of dried tarragon. Poured over the scallops and enjoyed! I know this all drastically changed the original recipe, but it's a five-star rating. Thanks for the recipe!

Almond-Topped Fish

Delish! I didn't have lemon or parsley, but a thin layer of romano cheese mixed with low-fat mayo over the seasoned fish was fabulous. I and my hub personally thought the combination of flavors (onion, dill, mayo/grated romano, etc.) blended wonderfully. Sooooo good!

Chicken In Basil Cream

Absolutely delish! I used boneless skinless chicken thighs and they took longer than 10 mins. to cook, and despite the fact that I lost a lot of the coating while they were sauteeing, they were still yummy with the scrumpshilicious sauce over them!

Tiramisu II

Absolutely fabulous! After reading the reviews, I doubled the coffee and rum. I didn't have cocoa powder, so I grated unsweetened baking chocolate over the top of the completed tirimasu. This was a huge hit at our super bowl party.

Sesame Pasta Chicken Salad

I used 5 med.-size boneless, skinless chicken thighs, seasoned with seasoned salt, garlic powder and pepper then microwaved about 10 minutes. I increased both the cilantro and green onion amounts to 1/3 cup each. I cut the oil in half after reading reviews, and I added blanched and chilled sugar snap peas (boiled for 1 min. then plunged in ice water for several minutes - this gives the peas a bright green color but they remain nice and crunchy) Also added an 11 oz. can of mandarin oranges drained and cut in half (would have added another can but only had one). This was insanely delicious!

Heather's Grilled Salmon

Absolutely delicious. I didn't have thyme, so I used dill weed which we love, especially with salmon. From now on when we have salmon for dinner, I'll have quite a dilema trying to decide between Heather's Grilled Salmon and Grilled Firecracker Salmon! They're both so good.

Fruit Pizza II

Fabulous! I didn't have a pizza pan, so I made this in 2 9" round cake pans - gave one to my neighbor and took one to a 4th of July party. Used strawberries, kiwi, blueberries and mandarin oranges. Everyone loved it. My only complaint is that the next day the bottom crust was soggy (although it still tasted yummy!).

Chinese Chicken Fried Rice II

I love this recipe! I usually double or triple it and add lots of things: bean sprouts, frozen peas and/or carrots, chunks of pineapple. Sometimes I use shrimp instead of chicken. VERY delicious!

Pineapple Sweet Potatoes

Delish! I peeled the potatoes, cut them up, put them in a bowl with a little water, and microwaved them for about 10 minutes. Then put them in a casserole dish with the other ingredients and heated them in the oven. Also, I used chunk pineapple rather than crushed. This was soooo good! Update: Made this for the second time tonight but used crushed pineapple - - I like it much better with the pineapple chunks; you can't really taste the pineapple when it's crushed. The pineapple flavor comes through much more with the chunks, and I think the chunks LOOK more appetizing.

Chocolate Caramel Candy

Made this to bring to my family's Easter and everyone went crazy for it! Only brought about 1/3 of the recipe and froze the rest in 2 lots. It makes a LOT! And it is so sweet you really can't eat more than one or two pieces at a time (I cut them into 1/2 inch pieces).
