Chicken In Basil Cream

Absolutely delish! I used boneless skinless chicken thighs and they took longer than 10 mins. to cook, and despite the fact that I lost a lot of the coating while they were sauteeing, they were still yummy with the scrumpshilicious sauce over them!

Tiramisu II

Absolutely fabulous! After reading the reviews, I doubled the coffee and rum. I didn't have cocoa powder, so I grated unsweetened baking chocolate over the top of the completed tirimasu. This was a huge hit at our super bowl party.

Make-Ahead Mashed Potatoes

Sesame Pasta Chicken Salad

I used 5 med.-size boneless, skinless chicken thighs, seasoned with seasoned salt, garlic powder and pepper then microwaved about 10 minutes. I increased both the cilantro and green onion amounts to 1/3 cup each. I cut the oil in half after reading reviews, and I added blanched and chilled sugar snap peas (boiled for 1 min. then plunged in ice water for several minutes - this gives the peas a bright green color but they remain nice and crunchy) Also added an 11 oz. can of mandarin oranges drained and cut in half (would have added another can but only had one). This was insanely delicious!

Heather's Grilled Salmon

Absolutely delicious. I didn't have thyme, so I used dill weed which we love, especially with salmon. From now on when we have salmon for dinner, I'll have quite a dilema trying to decide between Heather's Grilled Salmon and Grilled Firecracker Salmon! They're both so good.

Simple Scones

Delicious! I used dried cranberries instead of raisins, but will make them with dried blueberries, dates or whatever in the future. I especially liked them warmed with butter . . . MMMMMMM!

Fruit Pizza II

Fabulous! I didn't have a pizza pan, so I made this in 2 9" round cake pans - gave one to my neighbor and took one to a 4th of July party. Used strawberries, kiwi, blueberries and mandarin oranges. Everyone loved it. My only complaint is that the next day the bottom crust was soggy (although it still tasted yummy!).

Chinese Chicken Fried Rice II

GREAT recipe! I double the recipe, use 8 boneless skinless chicken thighs which I season lightly with seasoned salt, pepper and garlic powder, then microwave 'til done and cut into bite-sized pieces. I also add 2 cans of drained bean sprouts. Sometimes I add a lg. can of drained pineapple chunks, cut in half, and sometimes I add cashews or other nuts. Makes a delish main dish this way.

Pineapple Sweet Potatoes

Delish! I peeled the potatoes, cut them up, put them in a bowl with a little water, and microwaved them for about 10 minutes. Then put them in a casserole dish with the other ingredients and heated them in the oven. Also, I used chunk pineapple rather than crushed. This was soooo good! Update: Made this for the second time tonight but used crushed pineapple - - I like it much better with the pineapple chunks; you can't really taste the pineapple when it's crushed. The pineapple flavor comes through much more with the chunks, and I think the chunks LOOK more appetizing.

Chocolate Caramel Candy

Made this to bring to my family's Easter and everyone went crazy for it! Only brought about 1/3 of the recipe and froze the rest in 2 lots. It makes a LOT! And it is so sweet you really can't eat more than one or two pieces at a time (I cut them into 1/2 inch pieces).

These are delicious! Of course, they taste exactly like the full size sandwich; the only disappointment was that you really need a fork and possibly knife to eat them - I was hoping they could be "finger food" but they get a bit messy when trying to eat with the hands.

California Salad Bowl

Fabulous! Like others, I used black olives instead of green. I use 1 package of "Wholly Guacamole" rather than fresh avacados, and it makes a delicious dressing. First time I made this I thought the dressing could use a bit more "zip", so second time I added a bit more garlic, a bit of prepared horseradish and a few extra dashes of tobassco. I usually serve the crushed chips "on the side" so they don't get mushy. Perfect!

Czech Roast Pork

Delicious! Loved the flavor of the caraway seeds. Carved up the leftover meat and heated it in the gravy next day which was also yummy!
