Courtney's Three Tomato Pasta Sauce

This was an excellent recipe!! We have made it a few times and the kids love it too. I made a couple minor changes the 2nd time. I used a whole onion, sliced the sausages after it was cooked and I could not find cherry tomatoes so I used plum and sliced them. This will be a regular in my home.

Kale, Quinoa, and Avocado Salad with Lemon Dijon Vinaigrette

This was an amazing and very healthy salad. Loved it! I have been asked for the recipe many times so it has been a hit with my company also. I have made it many times and have just done a couple of changes. I substitute chicken broth instead of the water to cook the quinoa in. I add cherry tomatoes cut in half to the salad and I add a little more lemon and 1 clove of garlic finely chopped to the dressing. Thank you for the recipe!

Scalloped Potatoes and Onions

This was an excellent recipe. Love it and so did my family. Did not change anything other than I did put some cheese on top and then put it under the broiler till browned. Loved it and making it again.

Roasted Vegetable Pilaf

I really enjoyed this recipe! Very tasty. I did not have the rice pilaf Near East mix so I used chicken broth in the rice instead and it was still great. I let the vegetable sit in the oil and balsamic vinegar for a bit before puting them in the oven. Turned out great!!!

Killer Cheesecake

This recipe was delicious! The food processor made it very easy. I found this recipe tasted great cold but much better at room temperature. Cheesecake is hard to judge when it is done and an overcooked cheesecake will become dry, so if you take it out when the centre of the cake is still a little wiggly it turns out just perfect. The most effective way to bake cheesecake is to bake it in a water bath. Have a dish with a little water in it that is bigger than the cheesecake dish and it sits in it to cook. Since water evaporates at the boiling point, the water bath will never get hotter than 212 degrees F (100 degrees C), no matter what the oven temperature. This means that the outer edge of your cheesecake won't bake faster than the center, which can cause it to soufflé, sink, and crack. I added cherry pie filling cherries on the top. I will definately share this with company as I already did my familly.
