Baked Slow Cooker Chicken

2 hrs on high and 3 hrs on low for 4 lb chicken....otherwise it is too dry.

Foolproof Chocolate Fudge

Good base recipe. This is much better than the evaporated milk and mini marshmallow recipe. This is a nice firm consistency when cooled. I like to make mine using 2 cups of the dark chocolate chips and 1 cup of the semi sweet and after it is melted and ready to put in the pan I stir in the small 5 oz. bag of dried Montmorency cherries from Target (archer Farms) then pour into the pan. Wow!! It is so good!!

Bacon, Egg, and Cheese Strata

I added 1/4 cup of finely diced onion and a tablespoon of the jarred diced jalapenos to 2 tablespoons of butter and cooked in a pan till onions were tender. I then added this to the egg/milk mixture. I mixed bacon and some breakfast sausage for more flavor, layering with bread cubes in dish along with several different cheeses that I had remaining (cheddar, mont jack, parm). Poured egg mixture over and let sit overnight. It took longer than 60 mins to bake becuse of the deep dish I used and the additional meat. This was a big hit! Yum!

Avocado Feta Salsa

This is SO good that my 10 yr old who never would eat avacado actually tried and liked it!! These are great flavor combos. Took to a pool party and was gone before the first round of people ate! Yum! I could make a meal of this with a bowl of scoops.

Blue Bacon Stuffed Mushrooms

YUM! I make the batter the day before and put into 2 quart zip lock bags. 2 bags is better because the volume in each bag is easier to work with. The day I am usiing it, I take out of fridge and let it get to almost room temp. Just snip the corner of the quart bags and pipe into mushrooms. This filler makes SO much that I used double the amount of mushrooms. Great food for a party and easy! You can even pipe two pans of shrooms so that you bake one and save one for later...staggering the baking. I left a piped pan of shrooms in the fridge for about 2 hours and it was fine when I baked them. I bake them on my pampered chef large stoneware bar/cookie pan.

Corned Beef and Cabbage II

This was GREAT! I used a 4.8 lb Boars Head Brisket. I cooked it in heavy duty foil for 4 hrs at 300 degrees. It was wonderful. Even my Irish neighbor loved the flavor of this dish. My hubby wanted thirds. I did not realy alter the recipe very much. I used 2 oranges, and I didn't use the remaining butter for the cabbage. I also took the peels from the cooked apples and discarded them, and stirred the cooked apple into the cabbage. It is very important that your foil is very well sealed, so that the brisket is not dried out. I prefer the heavy duty foil for doing this. Good Luck!
