Awesome Broccoli-Cheese Casserole

Awesome is right! I tweaked it the way many others have. I used cream of chicken soup. 1/2 c sour cream and 1/2 c mayo. I used powdered onions so the kids wouldn't know it was in there. I used 12 oz of sharp cheddar and twice as much fresh broccoli which i par boiled. I also topped it with ritz crackers pulverized and mised with melted butter. I omitted the salt and never missed it. My daughters (age 11 and 8) both told me to never again buy the frozen broccoli and cheese that this was far better than anything they have ever had. This will go into my normal rotations! Thank you!!

Chili Rellenos Casserole

This is really really good!!! It's more of a side dish than a main meal. It would be great with black beans or Spanish Rice. I made this with 3T flour, 2 eggs 1 egg white, omitted the 1/2 c milk and added a slightly more than 5 oz of evaporated milk. I used enchilada sauce, almost a full can. I used less than the 16 oz of cheese. I used an 8x8 pan and cooked it for 30 min the first time and 15 min after adding the sauce and then i put it back in till the cheese melted. It comes out a bit like a green chilies quiche with sauce on it. Very good. I will make again!!

Prize Winning Baby Back Ribs

This just wasn't meant to be... first i THOUGHT i bought baby back ribs but i had beef ribs. I decided to go ahead anyway. The rub smelled great. Then i went to grill and the top piece was missing. So i put them in the oven for 2 hours at 250 degrees covered and on a rack so they didn't sit in the liquid. I took them out and covered them in bbq sauce then grilled them on low till both sides were the color i wanted. They were WONDERFUL!!! Can't wait to use these with actual babyback ribs!! The only things i changed was i added brown sugar to the rub. It leaves a crust and seals in everything!!

Old Fashioned Coconut Cream Pie

This is fantastic.. i made it with coconut milk and half and half combined to reach 3 cups. I used 3 egg yokes as others have said. I did use flour as i was out of corn starch. WOW it is so good. Took only minutes to make. I will be making it over and over. I will not however be listening to the Police and Queen while stirring the custard on my IPod because when you do that while having a glass of wine on New Years Eve the pudding starts to get chunky when the egg cooks because your not paying enough attention!! Thanks for Sharing this recipe. SO GOOD!

Amish White Bread

I was up at 3am with nothing to do. So i decided to bake the family some bread for breakfast. This was so easy. My loaf came out a little short, but the taste was wonderful. I used the second part to make cinnamon buns. I rolled it out. Put pats of butter, nuts, brown sugar and cinnamon in it. Rolled it up like a jelly roll then cut them. I placed them in a 9x9 pan that had cinnamon and brown sugar and butter on the bottom. I baked it for 30 min. They came out wonderful.

Broiled Tilapia Parmesan

tastes great, cooks up perfectly and SO SO easy. So why 4 and not 5 stars.. you can't taste the fish through it all. It's good, but i love fish and would have enjoyed the taste. It is really good though. I would recommend you give it a try, maybe cut back on the lemon and the cheese just a bit.

World's Best Lasagna

I make lasagna a lot, but i was having company and wanted to change it up a bit. This is the BEST i have ever had, home or out. I used ZERO of the salt, never missed it. The cheese and the sausage has enough salt already you truly don't need to ad any extra. The sauce does take a little while but I made it the night before. The noodles i let soak in the pan for about a half hour, they were still a bit hard when i put them in the pan but softened up perfectly when cooked. This is the ONLY recipe i will ever use to make lasagna again.

Caramel Apple Pork Chops

Green Tomato Relish

This is SO good. However, I took the advice of so many others and added only 3 cups of sugar. It was more than enough. With 3 cups worth it has the equivelent sweetness that store bought relish would have. It comes out perfect and has a nice crunch. There is one other thing i would change next time. I would not drain it. It did drain off a lot of water but i found when i filled my jars i did not have enough juice to fill them all up and it left air pockets. I have my fingers crossed that they will remain sealed. Not that they will last long. I am now customizing my family meals around this relish so i can use it more often!!

Sue's Hot Fudge Sauce

WOW, this took less than 15 minutes from start to finish. It made an amazing amount of sauce. I let my kids taste it one the pan was cooled before washing and a fight broke out about who got to have the most it was THAT good. Thank you so much for this, i will make it over and over. It was perfect exactly the way it is.

Irish Lamb Stew

Fool Proof!! I made this for St Patrick's day. I screwed it up.. i halved the recipe but instead of putting in a 1/2 cup of Guinness (in place of the wine) i put in the WHOLE bottle. I cooked it a bit longer with the top off and it boiled down. OMG does this taste fantastic. My 5 year old LOVES this.

Spicy Italian Pork Cutlets

This was perfect. I added diced zucchini and doubled the liquid so i could drizzle it over the pasta. I put in a teaspoon of cornstarch just to make it not so thin. It didn't thicken it much but just enough. The red pepper added just a small kick, not to spicy at all. My husband HATES PORK, but this he went back for seconds on. Just a great easy recipe. Thank you

Irish Cream Bundt Cake

the cake was easy to make and tasted great, what failed me was the glaze. I don't know if i did something wrong.. but i wish i had not put the Baily's in the pot. It curdled right away and it tasted terrible. But again the cake was great. Next time i make it i will make a very different glaze.

Real Italian Calzones

This was a breeze to make. the dough come out perfect. It made the best crust!! I made two sets (doubled recipe) the first i put the filling listed here and it was good, although next time i will add a ton of spinach and no pepperoni. The second i filled with provalone and italian cold cuts. I sent the 4 off with my husband for the 'guys' and only a small piece of one came back. It was a huge hit! It is just to simple not to make again, all i can think of is different ways to stuff it! thank you

BBQ Pork for Sandwiches

Fantastic. I made this exactly as listed. I sent it off with my husband to feed a crowd of guys. Even though i doubled this not a drop came back. I served with with cole slaw. I made it all the night before then put it back into the crock pot the next day for a little while before he took it. I will make this again and again. VERY VERY simple.

Golden Rum Cake

Extremely simple to make. I used Captain Morgans spiced rum, because it's my favorite rum. Came out wonderful. The glaze is so good i am only slightly embarrassed to admit i licked the spoon. I poked a holes all over the cake with a skewer. then poured half the glaze into the bunt pan and then put the cake back into the pan, then poked holes in the bottom and side and poured the rest of the glaze on top. I let it sit for about 5 minutes then inverted into my cake stand. It did drip a but but looked great. I also put CHOCOLATE CHIPS in the cake and drizzled melted dark chocolate on top in thin stripes once the glaze dried. It just gives it another level of flavor.

LOVE IT. I've made it twice. it's so simple. my kids can't get enough. i also ad peanuts to it and i drizzle melted dark chocolate over half.. my half! We will make this over and over.

Chickpea Salad with Red Onion and Tomato

I followed this as best i could. I used drained diced canned tomatoes because i was out of fresh. I also added a green pepper because i had one i needed to use up. This was FANTASTIC. Perfect to take places or just to keep in the fridge as a side dish or to top a salad with. I will make over and over.

Spinach Pasta Salad

Very easy to make. I added some chopped mint to make it a bit more Greek. But i stuck with the basic recipe, omitting the garlic salt. The Lemon and the Garlic give it a very fresh taste. This is something that i will make over and over. Could be a fantastic meal on it's own or even add some shrimp or chicken.
