Mexican Pumpkin Empanadas

My husband is Mexican and he gave this a thumbs up. I also added cinnamon to the dough per his suggestion. I skipped the egg wash, just out of personal preference.

This is delicious and the texture is fluffy. It does not leave a gross coating in your mouth, unlike the frosting recipes that use shortening.

Delicious with potatoes. I used brown sugar because I can't find palm sugar. One tbls of paste was sufficient for me in regards to heat and flavor.

Chocolate-Covered Cherry Cookies

These are the best! Its like eating a brownie with a cherry inside. I piped the frosting using a star tip, then added nonpareils for color. This was a fun and easy recipe.

Oaxacan Tacos

My husband is Mexican, and this is the way that tacos are really made. This is the kind of taco sold in restaurants and by street or market vendors; this is about as authentic as it gets. For additional flavor, serve with salsa verde, not Old El Paso or Pace. Salsa verde is the real stuff, and you can find the recipe on the site. The reviewers who said that this was bland and awful were probably expecting Americanized tacos: hard shells, ground beef cooked with taco seasoning, salsa, shredded cheese, lettuce, and sour cream. While there is nothing wrong with the Americanized variety, this is not what you should expect when you try this recipe.

Restaurant-Style Potato Salad

This is the exact flavor that I have been looking for. I used two celery ribs, diced very small. I did not have carrot or pimiento. My potatoes were cooked in 15 minutes because I cubed them before boiling. I served this with zesty slow cooker chicken barbecue, which I found on this site. If I didn't have to share with hubby, I would have eaten it all!

Zesty Slow Cooker Chicken Barbecue

This was SO good!!!! I used defrosted chicken.I tried other members' suggestions to add powdered Italian dressing, onion, and liquid smoke. The sauce was thin for my taste, so I added flour at the end of cooking to thicken. I served this with corn on the cob and restaurant style potato salad (found on this site). Thanks for a new slow cooker recipe.

Sparkling Fruit Salad

Refreshing. I used sparkling cider. It tastes even better after it has chilled overnight. I had to use cantaloupe because the grapes at the store were not ripe. Thanks for sharing.

Absolutely Ultimate Potato Soup
