Amusement Park Cornbread

Reviewed: Feb. 3, 2014
I changed the flour and cornmeal measurements as suggested by MRS. THOMAS (1/2 c. flour and 1 1/4 c. cornmeal). This is the cornbread recipe that I've been looking for. The batter made 12 nicely rounded muffins.

Perfect Sushi Rice

Reviewed: Jan. 17, 2014
I use seasoned rice vinegar, so I didn't need to add the sugar or salt. The ratio of rice to water is perfect. The vegetable oil made the rice easier to spread onto the nori (seaweed). This sushi rice really is perfect.

Serbian Ground Beef, Veggie, and Potato Bake

Reviewed: Jan. 13, 2014
I mistakenly added nutmeg instead of clove. After I realized my error, I added the clove anyways. Those spices plus the cinnamon really made this dish stand out. Based on the reviews of the Serbian and Croatian members, I did three layers of potatoes with a layer of meat in between. I liked mine with sour cream...just a personal preference. I didn't have red wine or beef boullion, but it didn't seem to affect the outcome. This is perfect comfort food for cold, gray weather.

Coconut Shrimp I

Reviewed: Dec. 31, 2013
Perfect! I used a frying pan to cook the shrimp. I only used about a 1/4 in. of oil. I used Modelo for the beer batter; it didn't leave an aftertaste. The shrimp was great even without dipping sauce. I'm never buying the frozen version again.

Mouth-Watering Stuffed Mushrooms

Reviewed: Dec. 31, 2013
It was even better than I anticipated. I like stuffed mushrooms with a little bit of crunch, so I sprinkled bread crumbs on top of the parmesan chese. A little bit of paprika added some color. I discovered that a toddler sized spoon is nicely sized for stuffing the cream cheese into the mushroom caps.

Its perfect; not too sweet. I use this to make the filling/ icing for my Irish creme chocolate cake. (I use Irish creme in place of the evaporated milk.)

Gnocchi I

Reviewed: Oct. 15, 2013
I can't believe it was so easy. Now I have another use for potatoes. I did follow one member's advice to add just enough flour until the dough is no longer sticky, but still pliable. I did a test batch (7 pieces), which was a good idea. My toddler even liked it.

Its delicious. The bake time is worth the wait. I've never heard of adding sugar to oven fries, but I was intrigued after reading the cook's note. Thanks for sharing.

My husband is Mexican and he gave this a thumbs up. I also added cinnamon to the dough per his suggestion. I skipped the egg wash, just out of personal preference.

This is delicious and the texture is fluffy. It does not leave a gross coating in your mouth, unlike the frosting recipes that use shortening.

Delicious with potatoes. I used brown sugar because I can't find palm sugar. One tbls of paste was sufficient for me in regards to heat and flavor.
