Spinach Stuffed Chicken Breasts
This was absolutely delicious, and very simple to make! I used fresh spinach instead of frozen (frozen is gross and mushy), and substituted precooked bacon for raw bacon. I seasoned the outside of the chicken breasts with salt and pepper and added the precooked bacon 10 minutes before it was done. This gave all of the bacon flavor, without all of the fat. Also, I would recommend cooking for 50 minutes, not an hour.

Cajun Chicken and Sausage Gumbo
I have been making this recipe for a year. Each time I make it, it gets a little bit better. It is my husband and son's favorite dish! I add carrots and I make my own creole seasoning which is pretty spicy. Other than that, I follow the recipe exactly. The roux turns out more like a caramel color after 10 minutes versus chocolate milk, but I've tried cooking it longer and it burns. Follow the recipe and enjoy!!!

Russian Mushroom and Potato Soup
I love this soup. However, I made a few changes. First, I omitted the mushrooms because I don't like them. Second, I pureed about half of the soup in the food processor because I like a smoother soup. Third, I added 2 cups of sharp cheddar cheese. It was quick, and my family loved it. I will definitely make this soup again!
