About this Cook
I like to eat healthy so I like recipes with tofu, lots of veggies, lean meats and fruit. On Thanksgiving I made a tofu pumpkin pie with a whole wheat crust.
My favorite things to cook
A true foodie.. I like all kinda of food and I enjoy making breakfast items... pancakes, waffles, muffins etc. I like to make biscotti! I like to devise themed menus for holidays or birthdays.
My favorite family cooking traditions
Home style foods like fried chicken, mashed potato's, crab imperial, stuffed peppers, chili, deviled eggs, ham salad and there is coffee cake, carrot cake,tea breads and cookies.
My cooking triumphs
I made challah bread on Easter and it was really good. I made this really good cippino one night...I made homemade dougnuts on Christmas...My brother is a huge Packer fan so for one Packer game I made cheese curds... they were better than the ones they sell at Lambeau field!
My cooking tragedies
One time I tried to make my usual tofu stir fry but for some reason the tofu was bad and than the veggies were not fresh... it just did not work.

Indian Relish
I made this for Memorial Day and put it on hot dogs and burgers. It was good. I did add some cornstarch to the recipe though to make it a little thicker.

Chicken Enchiladas I
This was great! I used 14 oz diced tomatoes with green chilies instead of tomato sauce...I put it in the blender first to make it liquidy. I did not add any cheese to the chicken mixture, only on top. I served it with quionea and blacks beans and with a dollop of sour cream (light ofcourse!). Everyone really liked it.
