Super-Delicious Zuppa Toscana

Very good! My husband loves this soup! I always use kale instead of spinach (tried it with spinach once and we thought it was slimey). The heavy cream is important (tried it with milk one time when I didn't have cream and it wasn't nearly as good). Great soup for any season!

Very good! I skipped the black beans (because I don't like them) and added a can of mexi-corn instead. It makes a lot but tastes good for a couple of days.

Zucchini Pie II

Very good! I used 6 cups of zucchini and made a lattice top. I like it as well (if not better) than apple pie! It's a great solution if you have tons of zucchini to use up like I do! No one can tell that it is zucchini unless you tell them!
