Ginger Glazed Mahi Mahi

As others have said that reviewed this recipe....while the sauce is delicious, it overpowers the delicate flavor of fresh Mahi. However, the sauce is delicious and I think would also be great on Salmon or Chicken.

Quinoa Side Dish

This was a tasty healthy recipe! Didn't have veggie stock, so I used Chicken. After melting butter, added the garlic and onion and sauté until onion became translucent. Then proceeded with remainder of recipe instructions. I will make again.

Tomato Basil Pasta

This was really good! I didn't have fresh tomatoes, so I drained a can of diced and only had red onion on hand. Added a Tablespoon of balsamic vinegar and tsp of dried oregano to the tomato mixture. To complete this meal, I topped this with parmesan crusted Mahi Mahi. My husband literally liked the plate clean! Delicious!!

Smoked Salmon Frittata

This was very good, but I may have overcooked it in the oven. Used capers instead of black olives. Might try adding some dill to the egg mixture next time.

Cherry Bomb Chicken

This recipe is the bomb, literally! I marinated the chicken for about 8 hours- 4 breasts on the bone (skin on) along with 2 thighs (skin on) and followed the directions exactly. The chicken had such an amazing flavor and was so juicy. Don't be afraid to use 3 Habanero peppers in the marinade - however, DO use gloves while handling to remove the seeds. Look for fresh, flavorful cherry tomatoes – it makes a difference. I followed the instructions in the video and used Red Pepper Jelly on top at the end. My dinner guests raved about the chicken. Will definitely make again! Amazing!

Creamy Goat Cheese Pasta with Spicy-Sweet Peppers & Shrimp

I had been looking for a recipe to incorporate these small, sweet & spicy red peppers. These yummy little peppers can be found at Whole Foods at the olive cart. Besides putting them on pizza, I was happy to find this recipe to use them in a different manner. This dish was bursting with flavor! As with others, I found the sauce would not have been enough for 6 servings. For 3 dinner portions, I only used 1/2 lb pasta, 3/4 lb shrimp and 1/2 cup chopped peppers...kept all the remaining measurements the same. Decided to use rainbow swiss chard instead of spinach since it was in season. Delicious!

Alfredo Sauce

Delicious simple Alfredo recipe! I used evaporated milk instead of heavy cream which cuts the calories and fat by 2/3 and adds flavor. As another suggested, replaced parsley with fresh chopped cilantro. Used 1 cup grated gruyere and 1/2 cup fresh grated parmesan reggiano. Mangia!

Roasted Rack of Lamb

The coating on this is awesome! Be sure to use a meat thermometer, and most importantly, put it in the correct spot. If the thermometer is too close to one of the bones, you will get an incorrect reading - as i did and the meat was way too rare.

Easier and healthier way to cook the egplant: After slicing and salting, brush one side with olive oil, place in Med-HOT pan for 3 min or until lightly browned. Brush other side of eggplant before flipping to brown the other side. As others did, I added a layer of thinly sliced potatoes on the bottom of the baking dish before the eggplant and i'm glad i did. It really gave the dish a nice foundation and additional texture. Perfect amount of sauce which created just the right thickness topping. Used ground buffalo for added flavor. This was delicious! Took much longer to make than 2 hrs... start this in the afternoon for dinner.

Poblano Chile Enchiladas a la Gringa

Delish! Instead of using 2 raw chicken breast, I used left over rotisserie chicken. Since my chicken was already cooked I added it to the stock with the onion and garlic for only the last 20 minutes. After the chicken cooled, i shredded it with 2 forks instead of slicing (personal preference). Next time, after draining 1 cup of the liquid, i will reserve the remaining onions and garlic and add it to the shredded chicken inside of the enchiladas (seemed like a waste not to use it). Do not skip the step of crisping the tortillas. Tip: make sure to BLACKEN ALL areas of the pepper and sweat them for a minimum of 30 minutes or longer and it will be a breeze to remove the skin...use gloves when handling.

Quick and Easy Sauteed Spinach

This was a perfect way to use up 2 bags of fresh organic spinach! Added 1 Tablespoon of minced garlic to the olive oil. Used Hymilayan Sea Salt instead of garlic salt. Delicious!

Dinah's Stuffed Mushrooms

These were very good and i received compliments from our guests. I followed the recipe exactly with the exception of cutting back on the butter as others did. I only used one stick of melted butter in the mixture. No need to pour butter over the shrooms when baking. Did not see neeed for pre-baking the mushroom caps prior to filling. I had enough filling for approx 50 small mushroom caps, so you could cut the filling in half or but more mushrooms. Based on this info, there is NO WAY these puppies are 300+ calories each. Will make again and put into cocktail party apps rotation.

Chicken Pot Pie IX

Delicious! The only reason I didn't give 5 stars was due to some additions/substitutions I made based on other reviews. Substituted evaporated milk for regular milk (this adds a more creamy flavor). Cooked the chicken and veggie mixture in chicken broth, then drained the broth to use in the hot liquid. Doubled the hot liquid as others suggested. I added 1/4 cup sherry and 1 tsp chopped garlic to the onions and butter. Also added 1/4 tsp chopped fresh thyme, 1/4 tsp chopped fresh rosemary, 1/2 tsp garlic powder and a few drops of tabasco to the hot liquid mixture. Basically, you can to season the liquid mixture to your palate for best results. As others suggested, I brushed a beaten egg over the lower pie crust and baked alone for 5 min to prevent sogginess, then added the filling (this worked perfectly!). Also brushed the top pie crust with egg prior to baking to get it golden brown. This is comfort food at it's best!!

Missy's Candied Walnut Gorgonzola Salad

This was a good change from a regular salad. Word of warning, be careful when doing the walnuts...if you cook them too long they will give off a slightly burned aroma and they will end up tasting like popcorn or cracker jacks.
