Sturdy Whipped Cream Frosting

I can't imagine using any other frosting again. I've used it twice for parties and got rave reviews both times. Many samplers said it was the best they had ever eaten. I plan to try a chocolate version next. It is simple and delicious! The best part was that it makes a LOT and since I baked sheet cakes there was a lot left for fruit, cookie, and finger dipping.

Turkey Brine

This was excellent. I bought two extra turkeys on sale in December and had the butcher saw them in half. I used a quarter of the recipe in a two gallon freezer bag with the 8 lb thawed half. I refrigerated it for 24 hours, turning it 3 times. I roasted it breast down and turned the heat up flipped it until it was crispy brown. It was moist and delicious. Mine did NOT cook faster than normal as some others have noted. It's a mystery.

Microwave Oven Peanut Brittle

As easy as it gets! I made several batches, some with cashews, others with pistachios, lots with salted or Spanish peanuts. I gave lots away and got raves. You can't make a faster home-made gift.

Friendship Soup Mix in a Jar

I made this soup prior to packaging it for gifts. We were not crazy about the ground beef so I suggested leftover chicken, turkey or beef as a substitute or leaving out the meat on my recipe card. It makes a huge pot of soup and is very hearty. I also substituted rainbow twist pasta rather than alphabet for extra color in the jar.

Cowboy Cookie Mix in a Jar

I made this recipe twice before I made up jars for gifts. I found that cutting up the stick of butter and letting it soften instead of melting it made a more cohesive dough. The melted butter didn't mix as thoroughly and the dough fell apart as I tried to form balls. With the softened butter the dough was evenly moist and the cookies were easier to work with and had better flavor. I also found that moistening my hands helped to keep the dough from sticking to them when I formed the balls.

Fried Rice I

I use this recipe as a base for the fried rice I make. As other reviewers have noted, rice cooked in advance seems to be preferrable but fresh rice is fine too. I don't put bacon in ours but do use 2 TBLS of bacon grease in addition to the oil. I also add the raw eggs on top of all my ingredients and cook until everything is shiny and the egg is done. We like this recipe best with chopped shrimp but I have also used chicken. I use frozen peas but this is a very versatile dish and you could use almost anything you like in it. We have it about once a month as a main dish and then use the leftovers as a side with other meals. It's a favorite in our house.

Apricot Lentil Soup

This was a delicious and hearty soup that we both enjoyed. I followed the recipe exactly with the exception of replacing raw garlic with 4 cloves of roasted garlic. I also chopped the apricots prior to sauteing. This soup is a wonderful alternative to the lentil soup I'm used to with it's slightly fruity taste. I served it with the Homesteader Cornbread recipe I found on this sight and we will definitely be having this duo again.

Homesteader Cornbread

I followed the recipe exactly and we were delighted with the results. It was the best cornbread I've ever made. My husband would have preferred it slightly sweeter but I found it to be perfect. It was not too light or too dense and came out a lovely golden color. There was enough for two meals and I was tempted to make it again for a third and fourth night. I'll never use another recipe!

Real Italian Calzones

This recipe will make 4 large calzones. I followed the recipe and ended up with 2 that were larger than dinner plates and there was too much crust for the amount of filling. Next time I will divide the dough into 4 parts and add 1 tsp of garlic powder to the dough as it was just a smidge bland.

Joey's Bread Pudding

I divided this recipe in half and used 2 8"x8" pans. I used half white and half whole wheat bread. I think that buttering each slice on both sides gives a very savory flavor although it is time consuming. I used kitchen shears to cut up the bread. I added 3/4 c raisins to 1 batch and 3/4 c blueberries soaked in vodka (They were strained from homemade blueberry cordial) to the other. They were both delicious.

German Chocolate Cake

I doubled the frosting recipe due to other reviews and the fact that I made this as a 2 layer birthday cake. It was for my honey and he thought it was better than his favorite (until now) German Chocolate Cake purchased from a bakery at $4.95 a slice.
