Fruit Pizza I

This recipe was FANTASTIC. I could hardly get enough. I made it for my son's 1st birthday, and I anticipate this will be a regular birthday tradition in our house. Next time I will make a thicker layer of fruit. Some of the fruit that I cut thinly ended up being too thin.

Three Cheese Garlic Scalloped Potatoes

This really was VERY tasty for how simple it was! I froze it after preparing it in anticipation for Christmas Dinner. Turned out delicious! One of the best dishes on the table.

Buffalo Chicken Wing Sauce

This was easy, and I feel that the vinegar and Worcestershire sauce gave it an addicting zing. I used Valentina Mexican extra hot sauce, and it turned out great. The butter helps bring down the heat so it's tolerable!

Best Brownies

Superb. I doubled it right off the bat. And good thing I did. They went fast. For the butter, I used 1/2 butter and 1/2 coconut oil. It came out with a pleasant hint of coconut flavor. Really, really good!

Frozen Cranberry Salad

I thought it was great! Used my own homemade cranberry sauce, and saved some of the whipped cream to spread over the top of the mixture once it was in the pan. But I do have to say, the kids did NOT like it quite as much as the adults.

Jimmy Dean Breakfast Casserole

Really, such a good flavor. But only 4 stars because it seemed to have so much moisture, it was hard to tell if it was cooked through or not. Maybe it was the mushrooms, or grease from sausage and cheese? I had to pour off the moisture when I took it out! But other than that, it was so flavorful. P.S. I also substituted potatoes for the bread.

Cranberry Sauce

MMMM! SO GOOD! To be honest, I probably did more than 12 oz of cranberries, and didn't really pay attention while everything heated up, so I never heard the cranberries pop. I just simmered it 10 or 15 min, then mashed it with a potato masher, and let it cool. Jelled perfectly, and has such a beautiful homemade taste!

Slow-Cooker Chicken Tortilla Soup

This dish is so easy and delicious. I put it on before church, and it's done by the time we get out. Everybody in my house LOVES this soup. I make it like twice a month now! The garnishes are a must: -Tortillas (We use a whole package (not just 10) and fry them in coconut oil -Mexican Crema or sour cream -Crumbled Queso Fresco -Avocado -Lime wedges Thanks for this recipe!!!!

Bread Pudding I

Pleasantly surprised! I made a few changes: 1. I used stale, week old home-made whole wheat rolls instead of white bread slices (worked great!) 2. Used brown sugar instead of white. 3. Used chopped granny smith apples instead of raisins. 4. I didn't have any nutmeg. I learned a few things: 1. Using apples gives you a break from all that sugar and gives you a sense of freshness. I sauteed the apples in butter first, which I won't do next time, because I think it cooked out too much of the tartness. I ended up adding some fresh, raw apples to each plate which gave it that sweet/tart balance I was looking for. It actually was DELICIOUS with the fresh granny smith apples. 2. Bread pudding is a lot like french toast! So we pulled out the left overs and had it for breakfast this morning. My 4 kids and hubby loved it! 3. The maple syrup or powdered sugar topping is what really makes this dish. We generously used powdered sugar.

Jay's Signature Pizza Crust

I used whole wheat flour and it still was great! I have been looking for a good whole wheat pizza crust, and something about this recipe really worked well for me! Usually my crusts ate heavy and crumbly, but this one was much lighter and doughier. I will def be using this again.

Key Lime Pie VII

Forgiving recipe! I doubled the recipe, then realized I only had 1/2 the amount of co denser sweetened milk I needed. I added a bit of maple syrup to make up for the missing sweetness. I still had plenty of mixture to fill two pies tins. I also substituted my homemade yogurt for the sour cream. My SIL said it was the best she's ever had.

Mexican Chocolate Cake

Oh my gosh. This was sooooo moist and wonderful!!! I used unrefined sugar and coconut oil. I also added a whole bag of chocolate chips since I wasnt going to frost it (I didn't need to use the whole bag though cuz the cake itself was so good). Next time I make it I will top it with whip cream and crushed Heath bar.

Gingerbread Cookies I

I was nervous to try any gingerbread cookie recipe since the reviews are so polar opposites! Either people loved it, or vehemently hated it! I doubled all the spices and vanilla- I'm so glad I did. I probably could've gotten away with adding even more. I ran out of molasses, so I had to substitute... I used 1/2 Cup of melted piloncillo. I used the extra 1/2 Cup of flour the recipe suggested. Be aware that the cookie can turn out soft and cake-y, or totally crunchy, like a tea cookie depending on how long you bake it! Not only that, but they harden a decent amount as they cool. I wanted it somewhere in the middle. I found that baking it for 9 min at 350 got it hard enough to frost, but not to crisp my kids wouldn't like them. I haven't eaten a lot of gingerbread cookies before. These turned out good and were fun to make.

I didn't have any wheat germ or dried fruits, but I couldn't tell the difference. It was still DELICIOUS. I love the idea of having a cereal I can feed my family that has zero corn syrup, zero preservatives, and a minimal amount of refined sugar (the brown sugar). I might try to replace that with an unrefined sugar and see how it turns out.

Cinnamon Raisin Bread I

Okay- DELICIOUS! I just had a piece right out of the oven. So soft, and sweet, and perfect with some butter! I followed others' advice cut the cooking time. Mine was perfectly brown after 25 min. I also followed someone's advice to leave the dough a little sticky to ensure a moister bread. It makes 3 loaves, but I only have 2 loaf pans. So I sliced up the 3rd loaf, put the pieces in a 9X13 pan, and sprinkled the tops with brown sugar. Tomorrow we'll have sticky buns for breakfast.

The Best Unbaked Cherry Cheesecake Ever

This cheesecake was DELICIOUS! I've also made it with fresh strawberries. Layered sliced strawberries in the middle of the cream mixture, and then on top to get as many strawberries as possible. It was sooooooo good!
