German Potato Cheese Soup

We got snowed in today and this made a HUGE pot of soup that we were able to share with our neighbors. I replaced the celery (because I am not a fan) with broccoli and the swiss cheese with shredded asiago. I added about 12 oz of velveeta cheese, because I felt it needed to be a little thicker and I definitely needed to add salt. I also added some turkey bacon for a little flair. Dee-lish!!

Banana Blueberry Muffins

The reason I am giving this 5 stars is that I love the fact it is a healthy muffin recipe. I exchanged the brown sugar for about a 1/4 c. brown sugar splenda blend and also added some extra fiber to the muffins. My husband LOVES them and I will continue to share these when family comes to visit. Thanks for a great recipe!

Grain and Nut Whole Wheat Pancakes

I love this recipe and have made it twice for family on weekend mornings. However, I subsituted plain fat free yogurt for the buttermilk, applesauce for the oil, and splenda for the sugar and they still were fantastic! This will be a family favorite. Thanks!

Glazed Apple Cookies

These cookies did not last long in my house! I cooked two batches, one at 400 degrees and the other at 350 degrees. The 350 degree cookies came out much softer and chewier (my preference). I just drizzled the glaze in a pretty pattern over the cookies rather than drop a big spoonful on them. They will be made again! Soon!

Golden Rum Cake

Awesome cake! It was gone in one day! However, I would definitely cut the rum back in the glaze to 1/4 cup. I love the rum flavor but it was a bit much to share with my family!
