This turned out great! I loved the cottage cheese and mozzarella combo and was thrilled (and a bit surprised) by how tender the matzo got. As a little bonus, I sauteed some spinach and garlic and added it on top of the cheese layers just to add a little vegetable. It was a hit, not only with my vegetarian seder guest, but with the whole crowd. I will definitely do it again.

Microwave Lemon Curd

I just tried this for the first time tonight. This recipe is about to become big in my life. I agree with other reviewers that it is on the tart side, but that's how I like my lemon, especially if you are going to serve it with something sweet. Definitely strain it through a fine mesh sieve to catch the bits of cooked egg and lemon zest that doesn't feel so good in the mouth. Silky, smooth, and the butter gives it a great richness. I would never have believed it, but this recipe ROCKS.

Blue Cranberry Sauce

This was really nice for Thanksgiving. While it doesn't make it "blue" this is also great with a pint of fresh raspberries instead of blueberries. Such a delicious spin on traditional cranberry sauce

Phyllo Chicken Packets

This was marvelous. I made it for a Christmas day brunch and it was such a hit. Following the tips of some other users, I used butter spray on the phyllo layers instead of spreading butter. Time saver, coated beautifully, and lightened up on the greasiness. I also substituted the onions (which I don't care for) with fresh chopped dill (as per the directions of another reviewer). The combination of the dill, lemon, and mayo was so beautiful and I got endless comments. Next time, I will try cooking it on a rack to keep the phyllo from getting soggy on the bottom. In any case, this was truly delicious

Whipped Mashed Potatoes

The technique is correct, but what will really make your potatoes decadent is to use cream instead of milk. Not necessarily the most health conscious method, but it will make your meal better.
