Easy Pancakes

YUM!! I am an absolute failure at making pancakes - even from a mix. I forced myself to try one last time, however, when my son begged this morning. :) And BOY am I glad I did! I cut the baking powder down to 2 tsp & added about a tsp of vanilla - otherwise followed the recipe to the letter. The pancakes cooked up so nicely, were light & fluffy (without being thick & cake-like) and had a perfect taste. THANKS FOR SUCH A GREAT & EASY RECIPE!!

Best Ever Banana Bread

WOW - sooooo good!! I typically don't even care for banana bread & I thought it was terrific! I doubled the recipe. I used a third brown sugar & two-thirds granulated sugar (on a whim). I also left the pecans out. Lastly, I used dark/non-stick pans so I had to drop the temp down to 300 after about 30 minutes to prevent the sides from getting too dark. I would HIGHLY recommend this recipe!!

Classic Waffles

Yummy! This was my FIRST attempt at homemade waffles & they were pretty darn good! I thought the recipe was lovely exactly as written, and pretty easy too. Thanks for a great recipe!

Jeannie's Famous Potato Hamburger Casserole

Not the healthiest recipe I've ever made - but EXCELLENT comfort food! I followed the recipe fairly closely - here were my alterations: I did NOT use the heavy cream, nor did I use the 1 extra cup of milk (just 3 cups of milk). I also added the cheese to the sauce while it was still cooking (since this is what I do when making au gratin potatoes). Lastly, I cooked it for 1 hour at 400 (again, like my au gratin potatoes) - covering with foil for the first 45 minutes. Yummy.

Cajun Shrimp

Quite good, VERY easy & fairly healthy too!!! I was a little concerned about the nutmeg - it can be such an overpowering spice - but no worries! Also, I cut down on the cayenne just a little due to other reviews about spiciness... Next time I'll use the entire 1/8 tsp, maybe a little more. Thanks for a great recipe!!

Waffles I

Yum!! Pretty darn good - especially considering it was my first time making them from scratch. I doubled the recipe (to have some left to freeze). I ended up using about half milk and half buttermilk ('cause I had some on hand) - which made the batter really thick. Probably would've been better as written. :) I also added a little vanilla bean - again I had it on hand. They had a REALLY good flavor - yummy.

Italian Breaded Pork Chops

Yum, yum, yum! I am so thrilled to have finally found a recipe that yields moist, tender pork chops! I used boneless chops that were about 3/4" thick. I reduced the ingredients for the breading in half (and still had lots leftover). I also doctored up plain breadcrumbs (w/ onion powder, garlic powder, salt, pepper, & dried basil) as I didn't have italian breadcrumbs. Otherwise, I followed the recipe as written & the chops were great! Thanks ElisaW for a great recipe!

Yellow Squash Casserole

This is one of my all-time FAVORITE ways to eat squash (albeit, not the healthiest perhaps...). I cook the squash/onion in the microwave w/ just a little water - simply because that's easier to me. Otherwise, I don't change a thing. GREAT recipe - I'll be making it for Turkey Day tomorrow!!

Chicken Spectacular

Great recipe! I've been making this for years & finally decided I needed to review it. I have made the recipe exactly as described - and it's quite good. BUT, here are the changes I now make after some tweaking: (1) I use cooked onion (or dried minced if I'm lazy) as I don't care for raw/slightly cooked onions; (2) I use a box of wild rice mix (including spice pack) prepared as directed on box & forego the wild rice/water in recipe; (3) I top with shredded medium or sharp cheddar - everything's better with cheese! Yum, yum, yum!!!!

Delicious Ham and Potato Soup

Very good! I doubled the recipe. On the advice of others, I added diced carrots (2) and a can of corn. I also added cheddar to the sauce. The texture was a tad off (grainy?), but I think it was due to my overcooking the soup. I also think I still prefer bacon to the ham in my potato soup. Overall, a great recipe!

Asparagus Casserole II

Yum! I've made this recipe several times & am more pleased each time. I followed the recipe exactly (the 2nd time anyway!). The KEY to making sure it doesn't get mushy is to LAYER the ingredients as mentioned in the directions. Stir the whole thing up & you're asking for mushy asparagus (believe me, I did that the first time!). Yum! Thanks for a great recipe!

Garlic Cheese Biscuits

WOW. I'll admit I was sceptical - we love Red Lobster's biscuits. These were TERRIFIC though! I added more cheese than called for (lost track of what I was doing, probably used almost a cup!, I added garlic powder to the batter, and I brushed the biscuits with garlic butter before AND after baking. Will DEFINITELY make again!

Salmon in Lemon-Dill Sauce
