Vegan Baked Oatmeal Patties

My family loves this recipe! We have changed it a little bit each time just to try different things. We've loved every version and it really surprised us that the leftovers were even better the next day. These definitely don't last long in our house. We even sliced the left overs and used them as "steak" in our fajitas. It's so versatile. I have discovered that it is best to get the sides a little crispy in a pan on medium heat before placing them in the oven. I also prefer ketchup over the spaghetti sauce. My husband adds a little ketchup on top once they are fully cooked and eats them like meatloaf. He is a brand new vegetarian so for him to like them, that is saying a LOT. :)

Harvest Vegan Nut Roast

Ok, after reading all the reviews, I took the constructive comments from both sides and created what can only be called "heaven on earth" as a vegetarian family. My husband is a meat and potatoes kind of guy who has recently become a vegetarian and he LOVED it. We got Italian bread crumbs so they were already seasoned. Because of this, I just seasoned it to taste with a little more Italian seasoning, basil, and sea salt. We used almond milk instead of soy milk and only enough to bind everything together into a meatloaf type of consistency. Instead of using the loaf pan, we put it in a round 9 in. cake pan. It ended up tasting like Turkey Stuffing from my pre-vegetarian days. This was a huge hit in our home (even with my super picky son)! If you tried it before and it didn't work, give it another shot. I'm making it again today because we didn't have any leftovers!! :)

Pineapple Fudge

I made this recipe using the tips from the review where the one person used heavy cream. It still came out very crumbly before I added the lemon juice. Here's how I fixed it: I added an extra teaspoon of lemon juice and I drizzled in some extra heavy cream. Just enough to make it smooth when mixed. Mine turned out very well...very smooth. Of course there is that bit of texture, but you expect that because there is pineapple in it and no matter how much you cook it pineapple will be grainy. It is very sweet though, so I'd suggest cutting it in smaller peices than you normally would for fudge. I hope this helps someone. Have fun!
