Zucchini Brownies

Reviewed: Mar. 30, 2011
I was surprisingly shocked at how good these taste. I did substitute 1/4c of the oil for apple sauce to reduce some of the fat. Also only used scant cup of sugar. I grated my zucchini with the biggest hole setting which I think was a mistake. Next time I'll try it in the food processor so the batter is smoother. Shockingly the batter was super thick and lumpy as others had reviewed and it comes out tasting smooth BUT the top still looked bumpy so it definitely needed the frosting to cover it up. I only used about 3/4 c of powdered sugar for the frosting and it still tasted very sweet. Would definitely make this again for myself, we'll have to see if kids like it tomorrow!

Apple Crisp IV

Reviewed: Nov. 15, 2010
I made this crisp for a huge gathering of 60 people so I used the serving increaser in allrecipes. I followed it exactly and it came out pretty yummy. I did add a little sprinkle of cinnamon and brown sugar over the apples after it was laid out. I made it into two huge pans and it cooked out perfectly at 45 minutes. Some soft, some a little crunch. I used granny smith apples. I would say that this recipe came out well and tasted great but it wasn't ridiculously amazing. It was good for a party but not blow your mind good, hence the 4 stars.

Easy Morning Glory Muffins

Reviewed: Mar. 9, 2010
I used brown sugar instead of white, decreased it to 3/4 cup, used 1 cup of apple sauce instead of the oil, left out walnuts and coconuts. I tried them when they came out of oven and didn't like them warm. You really have to wait for them to cool and they taste even better the next day. They're amazingly healthy with this revised recipe and were a major hit at my husband's work.

Best Big, Fat, Chewy Chocolate Chip Cookie

Reviewed: Feb. 2, 2010
Everyone loved these cookies but I think they're way too sweet and have way too many chocolate chips. There was almost no doughy parts to bite into as it's all chips, which then makes them too sweet. They're definitely good, but i've had better. Am going to try one of the Urban legend cookie recipes next.

Juicy Roasted Chicken

I used garlic powder because i didn't have onion powder. it was still delicious and so simple! i think it could use a little less butter next time but overall the flavor was very good. i used a 4.5 lb chicken and it took about 2 hours to cook.

Garlic Chicken Fragrant Rice On a Budget

Reviewed: Mar. 22, 2009
my goodness, i think this recipe is amazing! for how simple it is, i'm still shocked that it tastes so good. it has a chinese flavor to it because of the ginger and sesame oil and i think i could eat the whole dish. i left out the chicken because i was using the rice dish as a side to a roasted chicken. next time i'll 1/2 the amount of olive oil. super good!

Monkey Bread I

Reviewed: Apr. 29, 2008
I used 2, 13 oz Pillsbury buttermilk biscuits. Each has 8 biscuits inside so I flattened each biscuit, sprinkles them inside and outside with the sugar/cinnamon mixture and then rolled each one up like a cinnamon roll individually. I sprinkles crushed pecans on the bottom of a bundt pan and then put in the rolled biscuits. The 16 biscuits fit perfectly in the pan and it came out beautifully but I was not into the saltiness of using buttermilk biscuits. They basically tasted like biscuits with cinnamon and sugar. It looked like a 5 star recipe (see my posted picture) but definitely did not taste as good as it looked.

World's Best Lasagna

Reviewed: Nov. 1, 2007
This recipe was a lot of work and the whole time I was making the sauce, I was thinking, "this better be worth it". Well, it was. I made it for our Halloween party and everyone loved it, even the kids. I added one layer of chopped spinach so there would be some veggies in the dish and that turned out to be a good idea - the kids didn't even notice it or try to pick it out. And I used ground turkey instead. I also followed others advice and used brown sugar instead, cut out all the added salt, used fresh basil and let the noodles stand in 30 min. of hot water.

Baked Teriyaki Chicken

The sauce took about 3 minutes to whip together and the flavor was great. Next time I will try with breasts or thighs. I used some leftover sauce and cooked it with some frozen corn and peas, adding a little water. My son loved it all.

Rosemary Ranch Chicken Kabobs

This was really quick to make. I made the marinade in the morning and just kept it in the fridge until dinner time. I used chopped up pieces of chicken thigh and cooked it inside on my grill pan without the skewers. The flavor was delicious!

Grandma Ople's Apple Pie

Reviewed: Apr. 24, 2007
I always make this pie for either Thanksgiving or Christmas and it's always such a hit. The sauce that is poured over takes on a caramel flavor after being baked and everyone fights for the slices that have more of this topping. Simple and delicious.

Broiled Tilapia Parmesan

Reviewed: Apr. 24, 2007
This sauce is so easy and super tasty. A bit on the fatty side, but it's worth it once in awhile. Next time I will try a thicker/heavier fish like sea bass or halibut. The sauce is so simple and easy to use, it could work with any other fish, even salmon.

Chicken Marsala

I left this on the stove after making it and when I came back home, the whole pan was licked clean - my husband loved it. I used chicken thigh instead and doubled the sherry and marsala portion to make it more saucy.

Mouth-Watering Stuffed Mushrooms

Reviewed: Dec. 25, 2006
I just made a triple serving of this for the first time for my Christmas party. It was a huge hit. I was crunched on time on the day of the party so I made the stuffing (minus the crab) the day before and let it sit in fridge. Then added crab next day, put in ziplock back and piped into each mushroom. Then sprinkled with breadcrumbs. I used crimini mushrooms which look more fancy and brown better than the traditional mushroom. I took tips from different reviews and added crab meat and green onions during the saute process. They were a bit too cheesy for me, but everyone else seemed to love it. They disappeared off the table. I assumed about 3 per person for appetizers.
