Creamy Broccoli Soup

Did not go over well here at all. I followed the recipe except that I pureed the broccoli a bit like others had recommended. My son that will eat anything couldn't even eat this. I thought it was just edible, nothing that I would make again.

Manicotti

I made this recipe with a couple minor changes. I added frozen chopped spinach, garlic powder, and basil. I also used fat free ricotta, egg whites, and left out the Parmesan just to make it a bit more healthy. I didn't cook the manicotti shells at all before stuffing them. I covered my dish with foil and baked for 45 minutes. Shells were perfect. It was good and my kids enjoyed it as well. Will make again.

Classic Macaroni and Cheese

I had high hopes for this recipe. Sadly I didn't enjoy it. The cheese was clumped around and not creamy at all. It was pretty tasteless.

Red Potato Salad

I loved this recipe. I modified it just a bit. The only thing I did differently was adding 2.5 stalks of celery, about 3 pickles and 3-4 green onion. I love the crunch they added. I have had many potato salads before but none with red potatoes. The red potatoes make all the difference. This will be my new potato salad recipe(sorry mom).

Nacho Cheese Sauce

Classic Macaroni Salad

Great Recipe!!! I made a few changes to this recipe. I used reduced fat mayo(I hate miracle whip), reduced the amount of sugar to 1/4 cup, added 2 tbsps of pickle relish and a couple dashes of paprika. I made this the night before I served it. I got rave reviews about this recipe. Even my husband that hates mustard and refuses to eat anything with mustard gobbled this up. I will make this again and again.

Pumpkin Pancakes

These were awfil I followed the recipe exactly. The outside was done while the middle didn't cook enough and was very mushy. These were a waste of time. My kids only took one bite and wouldn't eat anymore. I thought they were just being picky. I tried one and it was gross. It got tossed in the garbage. I even put a few pancakes back on the griddle to see if I could get the middle to cook more and all that did was overcook the outside of the pancakes. Will not make again.

Mexican Beef Supreme

This is an awesome recipe. My husband is from Mexico and he loved this recipe when I made it tonight. My husband and kids asked me to make it at least once a week. I took some reviews and combined them. My grocery store didn't have stew meat so I used round steak and diced it real small. I cooked the onions and garlic in a little oil. After a few minutes I added the beef(and salt) and cooked the meat until browned. Next I added the cilantro mixture. Finally I took the pan with the meat, onions and cilantro mixture and added it to my crockpot. I then added two 7 ounce cans of green salsa. I let it cook in my crockpot on low for about 6 hours. The meat was very tender. We made soft tacos with the meat and served mexican rice on the side. Thanks for an amazing recipe.

Amy's Barbecue Chicken Salad

Very good. I used Wishbone Just 2 good ranch dressing to cut down on fat & calories. I cooked the chicken breasts on the grill with garlic salt & pepper. It came out great. I used pita bread to make sandwiches out of the leftovers. I kep the dressing on the side so it wou;dn't make the salad soggy. I also didn't use the french fried onions becuase I don't like them and I didn't want the extra calories anyway.

Spinach Pasta Salad

My son and husband said they really liked it and my husband asked me to make it once a week. I used Wishbone Just 2 good dressing to cut back on fay and calories. I also used a small can of sliced olives to cut back on fat & calories. I would have used reduced fat feta but I couldn't find it.
