Grandma Johnson's Scones
These also get my vote for best scone ever! I followed the recipe to the letter. Whenever a recipe calls for cutting in butter I grab my food processor and it did the job on this recipe quickly and perfectly with only a few pulses. I suspect this is one of those doughs, like biscuits and pie crust, that do best with the least amount of handling. I do believe that mixing the dough could be better accomplished, with less handling, by putting the dry ingredients directly on a flat sanitized surface (or wax paper), creating a well in the middle, adding the wet ingredients to the well and mixing gently by hand. Don't fret, the dry mess WILL come together with just a little kneading! It's a fairly forgiving dough as I handled this more than I would have liked and still had good results. You can simply pat the dough into a circle by hand. For this first batch I added 1 c. roughly chopped dry cranberries and the zest from one whole orange. The Krusteaz company makes a regionally available cranberry orange scone mix that we dearly love, but that I can only find in Colorado grocery stores. Grandma Johnson's Scones are every bit as delicious, just as easy and readily available. This is NOT good news for my diet!!
