Autumn Muffins

I usually take these to school every time there's a shared snack. It's always a hit with the kids. Most of the time I use what ever fruit I have on hand, but apples are a must!

Asian Salmon

I thought this was great! I only gave it 4 stars though, because my husband did not care for it. I would make it again, for company. I served it w/quinoa instead of rice.

Easy Meatloaf

I loved this, my husband who can't stand dishes like meatloaf (hence why I never make it), and who made fun of me when he heard we were having it, actually went back for seconds! I will make this again. Maybe even my picky toddler will eat some.

Fiery Fish Tacos with Crunchy Corn Salsa

Very good, yet not "the Best". I didn't think it was spicy enough, I think I'll make it again and substitute the cayenne pepper for chipotle powder instead. The corn salsa was awesome, even though jicama is hard to find this time of year and I had to leave it out, it was still fantastic. Also I added an Anaheim pepper for color/flavor. A definite 'make this again', with a couple of minor tweaks.

Apple Hermits

These were awesome! Originally I baked them for my son, but my husband and I were soon eating them too. I didn't use the sauce on them and they were still delicious. I did have one problem which I deem completely my fault! They turned out very flat and a bit crumbly, anyone know why? I did use mostly oat flour, and smidge of flax meal could that have been the cause?

Extreme Chocolate Cake

Zucchini Yogurt Multigrain Muffins

I have a hard time getting my 2 year old to eat anything. He just loves these muffins. I used whole fat yogurt for added fat/calories and love the fact he gets some veggies in his diet. These also freeze great, so I can make a big batch.

Chile Verde II

We love this, I use Anahaim when I can't find Poblano and about 1/2 a serrano for a spicier verde. I also increase the tomitillo's to a 1 - 1 1/2 lbs and reserve some to top each dish. Also I too, reduce the liquid and add as needed.

Quinoa Tabbouleh

Even my 18 month old loves this, which is great because it's chalk full of protein for him. I've made this a few times and I added a little more lemon juice for more of a kick and recently tried feta which was great. I'd love to add roasted pinenuts too. I cut down a bit on the green onion and used cilantro like some of the other reviewers recommended.
