Tortilla Rollups II

This a real go-to recipe for me. Everybody seems to love this one and it's so simple to make! Great for picnics and parties since they're good cold or at room temperature.

Bacon and Tomato Cups

I guess I am doing something wrong? I love the flavors of this recipe but I have two basic problems - I have a lot of the bacon mixture left over and my cups seem to flow over the tops of the mini muffin cups and become too large to serve. I stayed away from the "Grands" biscuits and I quarter each biscuit but I can't seem to get the proportions right. The taste is great though.

Steak Salad II

I made a few substitutions - I used minced green onions and chopped red bell pepper. This is a great way to get one steak to feed several people, plus it gave us the satisfaction of eating meat even while the majority of the meal was veggies. A success!

Kelli's Baked Halibut

My husband is not fond of fish but I keep trying to sneak it into his diet. This was a great recipe - I had all the ingredients on hand and it was easy. I used 3/4 cup cracker crumbs and 3/4 cup grated parmesan cheese, plus I used flounder since that was what was in the freezer. The only change I would make is to line the pan with foil and use non-stick spray - the bottom of my fish stuck to the pan and I lost pretty much of the coating. Thanks for this tasty idea!

Strawberry Pretzel Salad

I have always loved this dessert! I hate jello, this is the only way I will eat it. Just make sure you eat this the same day that you make it because the pretzel base will get soggy after about a day. We never have any leftovers though, so it's not a problem!

Buffalo Chicken Dip

This is one of the most successful recipes I can make for a party - absolutely everyone loves it! Instead of the ranch dressing though, I always use chunky blue cheese dressing and serve with celery. There are never any leftovers!!! Thanks for this awesome recipe!

Pepperoni Dip II

Hands-down, this is a favorite party food! Easy and a huge crowd-pleaser! I like to make this ahead and store in a Tupperware bowl with a lid. Then I can just spoon about 1/2 into a serving dish and microwave for about 5 minutes. Once that is gobbled up, I'll put out the other half - otherwise too much grease collects on top. This is one of my top 5 entertaining recipes - love it, love it, love it!

Hoagie Bake

Loved this! I prefer turkey hoagies to Italian hoagies so we buy the triple pack of lunchmeat that includes regular turkey, smoked turkey, and turkey ham. But this is great no matter what is used. Yum!

Baked Honey Mustard Chicken

I normally love honey mustard so I thought this would be a no-brainer. We did not really care for this. The sauce was too spicy and the basil didn't seem to go with the tastes. I used dijon mustard because we were out of spicy brown but maybe that was the problem? I don't think we'll be trying again, though.

Creamy Shrimp and Corn Soup

Loved this soup's creaminess! We used reduced fat soups and milk, and added 1/4 cup finely diced red pepper and a bit of garlic. Next time I think I'll add diced celery and more rosemary. Yum!

Awesome Ham Pasta Salad

This is the best pasta salad! We made a few changes to suit our taste - omitted the tomatoes altogether, substituted green onions for red and ditalini pasta for ziti, used only red peppers, and used sweet pickle relish instead of pickles. I thought the dressing sounded weird with the bouillon but it's fabulous! I agree with another reviewer that it looks like too much dressing at first but the next day it's got a great texture. Thanks so much for this recipe!

Chocolate Chip Cheese Ball

This is a great recipe for an easy, sweet treat to put out for a buffet or party. I prefer to leave out the nuts and graham crackers crumbs, and I serve with chocolate graham crackers sticks. Very tasty!

Corn Pudding II

I had never had anything like this before. I tried it for my first Thanksgiving dinner and it was AWESOME. I don't usually process the corn until smooth because I like a few kernels left whole for some texture. Also, I like to add a teaspoon of vanilla. This has become a Thanksgiving tradition at my house for the last 5 years.

Rempel Family Meatloaf

My mom's meatloaf is the best but it's very time-consuming and you have to babysit while it cooks. This is a wonderful week-night meal! Easy and quick, plus I had most of the ingredients right in my pantry and freezer. I didn't change a thing - loved it as is!

Warm Blue Cheese Dip with Garlic and Bacon

Yum! I used a bottle of real bacon pieces instead due to lack of time. Served with sliced French bread and it was gone in no time. Very rich and tasty!
