Crescent Dogs

So good for weeknights! Not low in calories/fat and not super cheap to make, but a whole family pleaser. I prefer using sliced American cheese.

Artichoke Pie

This was OK. We added more artichokes, an extra egg and some light cream to increase the moistness. Only used about half of the mozzarella and that worked out just fine. I def think the addition of some spinach would be good, too.

For being such an easy recipe, this was pretty tasty! Mine needed to bake longer also. I used light cream, since that's what we had in the fridge.

Vegetable-Stuffed Portobello Mushrooms

This was really good! We skipped the eggplant but I only made 2 mushrooms since it was just DH and me. I also used lots more cheese - yum! I had too much filling so I just put it around the mushrooms in the baking pan. Our only complaint was that the mushrooms did taste like biting into vinegar - ick! So next time I will either make this as a casserole OR I will only brush the mushrooms with balsamic and EVOO before baking, as others have suggested. Tasty and a great non-meat dinner - thanks!

Beef and Noodles in Crockpot

This was good and certainly easy enough. I added a can of Golden Mushroom soup this time, and next time I want to add some baby carrots and cubed potatoes. The gravy is thin but tasty - I think a shot of Worcestershire may be yummy next time.

Tomato Cakes

This was SO GREAT! I chose this recipe to use up some of the abundance of tomatoes from the garden, so I didn't use the can. I just diced up two large tomatoes into small pieces and used that. I also used the new mini Saltines (about 70), because that's what we had. My mixture wouldn't form patties since I obviously tinkered with the ingredients but I just called it "Tomato Hash" and threw it into the oil in the skillet and cooked and stirred until it was done. WE LOVED THIS so MUCH! It made plain ole mac-n-cheese dinner actually something to enjoy! Thank you so much for this recipe, we'll be having this again and again!

Chicken Alfredo with Plum Tomatoes

This was just OK for me. I sliced the chicken into strips and baked in the oven with minced garlic while I prepared orzo to serve with this. Then I used the white wine to deglaze the baking pan and poured that into my sauce. DH loved it, I thought it was alright - seemed a bit bland.

Corn Dog Casserole

I thought this was just OK but the hubs really liked it a lot. We omitted the celery and onion but found it to be a bit dry. Next time I think we'll try adding sour cream to the corn bread mix for some moisture. Not bad for a quick weeknight meal.

Make-Ahead Meatballs

I used this as a base for my first time making my own meatballs and they turned out really well! Instead of the onion, salt and pepper I subbed a packet of onion soup mix, I used half of the bread crumbs and used 1 cup of parmesan cheese, added 1/2 cup milk to make sure they were moist and added 2 tsp. dried parsley for some color. Very mild and versatile, plus cheaper than the pre-made bags of meatballs that I used to buy! Thanks!

Pasta and White Beans Gratin

We felt this was WAY too dry. If I were to try this again, I think I would add spinach, egg and shredded mozzarella to the beans and pasta to give it some more flavor, color and moistness. The ricotta/parm/garlic was a lovely flavor combo, especially with the crispy bread crumb topping.

Chicken Noodle Salad with Peanut-Ginger Dressing

This is good! I really like the taste of the peanut sauce, even though I had to make do without the garlic-chili sauce. I omitted the celery since I don't like it but next time I think I'll add some seeded, diced cucumber in place of it. I think this would be just fine without the chicken, too. I like to make a batch of this on Sunday nights to take in for lunches at work throughout the week. Thanks for the post!

Parmesan Artichoke Casserole

Couldn't be easier to make and it tastes absolutely decadent! I used a 14 oz. can of artichoke hearts and 10 oz. of chopped frozen spinach (thawed). I also added 4 oz. of shredded Italian cheese blend in with the other ingredients and sprinkled another 4 oz. over top of all. I made this in an 11x7 pan and it seemed to fit just fine. Next time I may add some chopped cooked chicken or some diced roasted red peppers. Served with Texas Toast and got raves from DH!

Frozen Cherry Cream Pie

So easy and so yummy! I made this to have something sweet and refreshing around the house this week due to an extreme heat wave, and this fit the bill! I used half of the Cool Whip in the pie filling and spread the remaining amount over top of the pie. For entertaining, I think I'll try this as mini muffins in paper liners with homemade graham cracker crumb crusts on the bottom and an individual cherry on top of each.

Creamy Chicken with Corn, Tarragon and Tomatoes

I always forget how much I enjoy the taste of tarragon! This is a very subtle flavor - I loved it but the hubs found it a bit bland. I used 3 plum tomatoes and cut the chicken into strips. Next time I will probably double the amount of corn. Very nice!

Breakfast Pies

DH loved these, I just thought they were OK. I'm really only able to get Grands biscuits at our grocery so I had to cut each biscuit down. However, I used a whole pound of sausage so I made more than 10 muffins. These were tasty but a bit annoying to make. I'm considering making and baking them, then popping them into the freezer for breakfast/lunch options.
