Gourmet Sweet Potato Classic

This was really pretty easy and a great dish to make ahead. DH and I don't eat sweet potatoes but I made this for our other guests on Thanksgiving and they seemed to really like it.

Pizza Pinwheels

These were great - received lots of compliments! Easy to do, especially with the newer non-perforated crescent roll doughs and quick. I added a shake or two of Italian seasoning to the dough before rolling up and heated the pizza sauce in the microwave a bit before serving. Yum!

Rick's Special Buttercream Frosting

I'm sorry, we just didn't care for this. I took PP's hints to use half butter and half Crisco but it still tasted way too greasy to me. Plus, mine turned out too fluffy and wouldn't spread well for me! (That may be my fault, maybe I beat it for too long.) Anyway, my search for the perfect frosting will continue...

Asian Chicken and Rice Bake

We didn't like this, it was just too bland. The chicken was very moist but the taste was just blah to us. I subbed chicken broth for the water and added some fresh grated ginger to the sauce.

I love this for Halloween! Except we just make Dirt Dessert instead of the cake and use Milano cookies for the tombstones. Tastes good and is very cute!

Three Packet Slow Cooker Roast

Wow. Who would have believed this could be so easy yet so good? I subbed a cup of homemade beef broth for the water and gravy mix. I didn't notice a lot of seasoning flavor from the meat but it was absolutely falling-apart tender. Once the roast was done, I removed it to my KA stand mixer and used the paddle attachment to shred it, then returned it back to the slow cooker. Served with club rolls, sliced provolone, mayo and horseradish - yum!

Tasty Lentil Tacos

We love meat. That being said, this was actually very good! I'd never had lentils before and this was a good first experience. We used salsa to top the tacos instead of plain tomatoes, plus we used tomato-flavored tortilla shells. Thanks for helping us to expand our healthy recipes!

Tangy Apple Chicken Loaf

This was so good! DH wasn't happy until he tasted it - now he wants me to make it again! I had to sub ground turkey and had to skip the sage (we're out). I grated 7 baby carrots and that seemed to be fine. This was not dry or bland, although I've had problems with ground turkey before. Thanks for a healthy alternative, we'll be making this often!

Fierro Chicken

Oh wow - so good and easy! This is basically just a dump recipe but the flavor is more complex than that and the chicken is wonderfully tender. I used red enchilada sauce (we're not big on heat) and had to sub a can of mushroom pieces for the fresh and half-and-half for the heavy cream. Served over brown rice - very good!

Simple Spinach Lasagna

This tasted good and was easy to put together. Not so pleasing to the eye, though - the spinach makes the sauce look brown and kinda nasty. I used a 45 oz. jar of sauce, which worked out really well. I think that I will save some of the plain jar sauce for the very top layer next time, just so the appearance is better. I used part-skim ricotta instead of cottage cheese because it was cheaper, and I used an additional 4 oz. mozzarella and 2 oz. parmesan sprinkled over the very top. Lasagna is very filling and this made a lot so, as an added bonus, I have several individual servings in my freezer for future lunches.

Campbell's® Slow-Cooked Pulled Pork Sandwiches

WOW! Couldn't be simpler and oh-so-tasty! I could only get a pork butt roast at our store and that was just fine. I didn't brown my pork first, and it seemed just fine to me. Added a tablespoon of garlic and brown mustard, just for some tang. Next time I want to add a bit of Liquid Smoke for some depth. This is not your typical BBQ pork - DH still put BBQ sauce on his sandwiches - but this gives it such a delightful seasoned flavor. We'll be making this all the time!

Fast and Easy Hamburger Casserole

This is really just a variation on a hamburger gravy that you serve over top of the baked biscuits. It's not a gourmet recipe and probably not something to serve to company... That being said, we love this for quick weeknight dinners. I can't believe I haven't rated this yet, we make this about once a month or so! We like how quick/easy/cheap it is.

Artichoke Pie

This was OK. We added more artichokes, an extra egg and some light cream to increase the moistness. Only used about half of the mozzarella and that worked out just fine. I def think the addition of some spinach would be good, too.

Vegetable-Stuffed Portobello Mushrooms

This was really good! We skipped the eggplant but I only made 2 mushrooms since it was just DH and me. I also used lots more cheese - yum! I had too much filling so I just put it around the mushrooms in the baking pan. Our only complaint was that the mushrooms did taste like biting into vinegar - ick! So next time I will either make this as a casserole OR I will only brush the mushrooms with balsamic and EVOO before baking, as others have suggested. Tasty and a great non-meat dinner - thanks!

Beef and Noodles in Crockpot

This was good and certainly easy enough. I added a can of Golden Mushroom soup this time, and next time I want to add some baby carrots and cubed potatoes. The gravy is thin but tasty - I think a shot of Worcestershire may be yummy next time.
