Bacon Wrapped Chicken

Yummy! Love the combo of the bacon with the cream cheese, chives and bacon. Easy to make, just takes a while to bake.

Meatloaf

This is what my mom always made, with a few little changes. Because we kids didn't like onion, she subbed a packet of onion soup mix. Instead of the steak sauce, she used Worcestershire sauce and added some liquid smoke. Also, she made a sauce of ketchup, brown sugar and yellow mustard for on top. She always fried this up in her electric skillet with carrots, potatoes and stewed tomatoes surrounding the meatloaf. Mmmm!

Chicken Pot Pie Soup

This was good! I was leery due to the canned soups but it really was the taste and consistency that I was looking for. I liked this with peas, carrots and onions, sauted in the sauce pan before adding the other ingredients. Biscuits are a must with this soup.

Chicken Caesar Pasta

This was so good! Of course I made some changes, however. Instead of cooking the chicken in a skillet, I marinated it in some of the Caesar dressing for an hour and then grilled it on my GF grill - tasted great! Instead of romaine, I used a sack of spinach leaves and I had to leave out the tomato because they're just disgusting at this time of year. I added a bag of Italian 4-cheese blend of shredded cheese. This made a TON - I made sure to keep the dressing separate so I can eat this for lunch all week. I shook up the dressing, vinegar and parmesan in a cleaned peanut butter jar with a lid, and that's what I'm using to store the leftover in the fridge this week. Even the hubs loved this - thanks!

Cheesy Mexi-Rice Casserole

The purists will be mad at me for the substitutions I made, but we were snowed in! And I really liked this dish! I had NO RICE (how does that happen anyway) so I had to sub barley. I had a shredded Mexican cheese blend which I used in place of the Velveeta. Also, I added a can of drained black beans for protein so I could make this a one-dish meal. I ate this plain but the hubs wrapped into soft tortillas and made burritos out of them. Really good and it makes a ton - I've got 4 lunches in the freezer for next week!

Sloppy Joes II

So good, so easy and so economical! I added a couple of splashes of Worcestershire sauce, which was tasty. I love that I have almost all of these ingredients in my pantry/fridge on a regular basis. Thanks and YUM!

Grilled Pizza Wraps

Simple and good. I added some diced green pepper and sliced black olive - anything you like on a pizza will be great. We made these on our George Foreman grill and it worked really well. Next time we'll experiment with different cheese and maybe some sort of white pizza sauce.

Spinach Pinwheels

3 simple ingredients with great results! Even when they're messy to cut, they still end up looking pretty decent and tasting wonderful. I used Alouette spread and the seamless crescent roll dough. This is a keeper.

Classic Caramel Corn

Take this recipe to another level - add a half teaspoon of cinnamon when you add the baking soda and vanilla, then drizzle with melted white chocolate chips after baking. Tastes like Cinnabon! Very addictive...

Libby's® Pumpkin Cranberry Bread

This was so good! I halved the recipe to just make one loaf but I think the next time I will make the full two loaves and try freezing one. I used whole wheat flour, used half white and half brown sugars, used half oil and half applesauce and used craisins for the cranberries. Served with an Autumn Butter - 1/4 cup brown sugar, 1 tsp pumpkin pie spice, 1/4 cup whipping cream beat together with a cup of softened butter. Delightful!

Bacon-Wrapped Pineapple Bites

I make these with just brown sugar instead of the sweet n sour sauce. I think it works best when I cut each slice of bacon in half. I baked at 375 for 20 minutes, then turned and baked for another 10 minutes.

Easy Ham and Cheese Appetizer Sandwiches

Yum! These were so good and easy. I used about a tablespoon of onion powder instead of the grated onion, due to our guests' tastes. We used mini party rolls and stuck each with a toothpick to keep it together. Simple food with a gourmet twist - love it!

Caramel Peanut Fudge

So decadent! A friend had made this recipe but called it Snickers Fudge. I knew I had to try it, it was so good! It does taste very much like a Snickers candy bar! It makes a lot and is very rich, so I'll only make this for a larger group. Really simple to put together, it's just the cooling/chilling that takes so much time. I solved this by doing only 1 or 2 layers per night in the days leading up to Christmas and refrigerating in between times. You definitely need waxed paper or parchment paper on the bottom of the pan or you'll never get these out - they're very sticky.

Seafood Lasagna II

This ROCKS! I made this for Christmas dinner and got rave reviews. Per other reviews, I skipped the scallops and used 2 pounds of shrimp and 1 pound of real crabmeat. I used garlic-flavored alfredo sauce and added TWO cloves of garlic. I also chopped the shrimp into bite-sized pieces. Although this doesn't look all that glamorous, it tastes like sheer indulgence. Really good with garlic bread and a spinach salad. Thank you for this recipe!
