Broccoli Hamburger Casserole

I halved the recipe and layered it over top cooked brown rice. This just didn't appeal to us. I think I would have preferred it with chicken instead of beef.

Chicken Diablo

This was SO GOOD! Instead of cooking on the stovetop, we grilled on our GF grill and just served the boiled sauce over top with rice. This is so easy, I know we'll be having this often!

Applesauce Pie

This was just OK for us. I like the flavor but the texture doesn't appeal to me - creamy yet wet. I added a bit of vanilla extract to mine. Also, I think I would prefer a regular pasty pie shell instead of the graham cracker crust.

Baked Omelet Squares

This was so good and so easy! I figured we could tailor this to our personal omelet tastes and it seemed to work great. Instead of ham I used 16 oz. bulk pork sausage. While I was browning it, I added the onion plus chopped green peppers and fresh mushrooms (since that's what we had in the fridge) - didn't need the butter, just used the fat released from the sausage. I left out the jalapeno but added the remaining 1/2 cup of cheese left in the bag to the top of the casserole. The cheese on the bottom becomes a delightfully chewy crust. Served with lots of ketchup to rave reviews. Thanks!

Zucchini Herb Casserole

This was just OK for us. I increased the rice to 1/2 cup uncooked, subbed a red onion for the green and used mozzarella instead of cheddar. I think the cheddar would be better - it's more zesty. Other than that, this just seemed a bit bland to us.

Slow Cooker Casserole

This was OK - easy, fairly cheap and tasted OK. I don't know if it's something we'll crave but it's a nice recipe to have in my repetoire. I truly don't think the butter is necessary at all - this was already very rich with the soups. We used the Roasted Chicken Ramen noodles, don't know if the Creamy Chicken would have been better/worse.

Southwestern Chicken and Rice Casserole

I added a drained can of black beans and more cheese, plus I chopped up the chicken per PP's advice. This was good but still a bit soupy for my taste. Next time I think I'll increase the amount of uncooked rice (I used brown) to about 1 1/4 cups and see if that helps. The taste was just what I was looking for so we will be having this again.

Super-Simple, Super-Spicy Mongolian Beef

This was fine, just nothing spectacular for us. I marinated the meat for 24 hours, then grilled it on our GF grill and boiled the leftover marinade on the stovetop with some fresh broccoli and carrots. Served over brown rice.

Creamy Shell Pasta Salad

Good pasta salad! I had to use pasta rings instead of seashell shapes and cubed cheddar instead of American. I omitted the celery, sunflower kernels and egg and just added chopped carrot instead due to personal taste. The dressing is tasty!

Strawberry Bread

Very good! I halved the recipe to make just one loaf. I use wheat flour and skipped the pecans due to our personal taste. Used 2 pints of strawberries - one diced and the other pureed - and added a teaspoon of vanilla. Mmmm...

Spinach and Rice Alfredo

Delish! I used brown rice instead of white, 10 oz. frozen spinach instead of fresh and sour cream instead of whipping cream. This is not bland, like I had worried - it's got a great taste! I made this for a couple day's lunches at work. Mmmm....

Pistachio Cake III

This was cute and tasted pretty good. I used PP's advice to sub 1 cup of sour cream for 2 of the eggs and had no trouble with my cake collapsing. Next time I think I will try making some sort of glaze or frosting.

Monterey Spaghetti

I really used this more as a basis of a recipe. I doubled the amount of spaghetti, used only 2 cups of cheese and used sauteed onions instead of the ones from a can. However, I also added a drained can of diced tomatoes and 1/2 pound of crumbled bacon. I didn't have time to make in a slow cooker so I baked at 400 for 40 minutes per PP. This was so good!

Santa Fe Veggie Quesadillas

We turned these into more of a burrito. Quickest dinner ever, tastes good and is meatless - that's a great combination! I just rinsed and drained a can of black beans and another of corn, stirred in some dry taco seasoning and nuked for about 1 1/2 minutes. Put this mixture into large tortilla shells, added salsa, cheese and sour cream and rolled up. So good! We didn't have any red pepper or green onion but I'm sure they would be tasty also. Thanks for the inspiration!

Lemonade Pie III

Oh, just delightful. So EASY yet so good! My hubby doesn't even really like lemonade and he gobbled this up. I know there are other recipes out there with cream cheese but I think I like the really light texture of this pie without it. Great dessert for summer picnics or weeknights with the family. Thanks!

North Carolina-Style Pulled Pork

Oh. my. gosh. This is EXACTLY what I was looking for! So great and so easy! I only had a 1 1/2 lb roast but I just halved the sauce ingredients because we like a lot of sauce. I only used 3/4 cup of the vinegar (not 1 cup) because of previous reviewers. Added a little more brown sugar, a good glug of Liquid Smoke and subbed some chili powder for the red pepper flakes. All I did was mix up the sauce ingredients (with my changes) and poured it over the defrosted roast in the slow cooker. Cooked on low for about 8 hours. Vinegar-y, sweet, with just the right amount of heat for us. Served on potato rolls - DELISH! Thank you!

Cottage Cheese Chicken Enchiladas

Mmmm... very good! We really liked this. I grilled the chicken with the taco seasoning mix on my GF grill and just added some onion powder to the cottage cheese mixture. I think I'll use about a half cup less of the cottage cheese next time, since it was a touch soupy. I sprinkled chopped black olives over top before baking, which added to the appearance and taste.
