Portobello Bellybuttons

OMG this was quick and GOOD! I used more garlic and butter, fresh basil instead of dried, and I used 4 portobellos and no button mushrooms. Also, I added about a half cup of RF sour cream to the sauce at the end. This was delicious and there were no leftovers!

Creamy Mustard and Tarragon Chicken

Wow, this was yummy! Per PP's comments, I pounded the chicken breasts flat and doubled the sauce - so glad I did! I served this over couscous and it was so good!

London Broil II

I increased the garlic, omitted the oregano and added about 2 tsp. lemon juice. I only marinated for 24 hours and then grilled on our GF grill. Tender and juicy, and super simple! Love that these simple ingredients are always in my house.

Grilled Portobello with Basil Mayonnaise Sandwich

Wow, so good! I added a bit of minced garlic to the mayo mixture, skipped grilling the buns and subbed roasted red peppers and mozzarella for the lettuce and tomato. Couldn't believe what a quick and delicious meal this was - thanks!

Spinach and Tomato Rotini

This was simple but good, perfect for an inexpensive weeknight dinner. Because we were pressed for time, I just used a can of diced tomatoes with garlic and olive oil instead of the fresh ingredients. I figure the whole meal cost me about $2.50.

To Die For Blueberry Muffins

These were the first blueberry muffins I've ever tried but they were good! I used too many blueberries, but that was my fault. I added some freshly grated nutmeg to the batter and used white sugar for the streusel topping so I wouldn't overpower that hint - was great! I'll be baking these again.

Simple and good. I agree - a little extra seasoning would not be amiss. Next time I will try using diced tomatoes with garlic, at least. Possibly some balsamic or red wine vinegar would help to jazz it up, also.

This was OK, we just felt there was too much spinach compared to the other ingredients. Not a fan of broccoli so I omitted it, and used a small chopped onion in place of the green onion.

Slow Cooker London Broil

Unexpectedly good flavor for unusual combination of ingredients! I used london broil, added a tablespoon each of Worcestershire and red wine vinegar (per pp's) and added some chopped potatoes and baby carrots. Leftovers were just as good!

Zesty Slow Cooker Chicken Barbecue

This was good and certainly easy. We used the honey flavor of K C Masterpiece. Because I didn't want it to be too watery, I used dry Italian dressing mix instead of the prepared dressing. Served on potato rolls - yum.

Creamy Pasta Bake

Meh. Mine didn't turn out creamy, which was a disappointment. I used whole wheat penne, added some minced garlic, sprinkled with mozzarella and covered with foil. This tasted OK but nothing special for us.

Slow-Cooked Tamale Casserole

I would give this 3 1/2 stars. Simple enough and very filling. Per PP's advice, I just used a box of Jiffy cornbread mix, 1 egg and a cup of milk since I never have cornmeal on hand. I used diced tomatoes with green chilies and taco seasoning mix. I think the next time I may use black beans instead of ground beef, would probably be just as good but less expensive and meatless. I served with some sour cream.

Texas Hash

DH really liked this, I just thought it was OK. I did add some Worcestershire, a chopped onion and some garlic. I used shredded cheddar instead of American cheese. I think you could just cover your skillet with a lid after topping with cheese - I don't think the baking part is necessary.
