Salad Pizza

Simple to make but sloppy to eat, I agree. I usually leave off the chicken but add some shredded mozzarella for a meatless meal.

Cinnamon Streusel Orange Muffins

These were good! I added the zest of one large orange, which helped to highlight the flavor. Also, I used turbinado sugar in the cinnamon topping instead of white and it was a really nice touch!

Enchilada Casserole

This was a good, meatless meal! Quick to put together and very satisfying, even the hubs liked it! I had to skip the tempeh because he wouldn't have touched it. Instead I added a can of drained corn and diced tomatoes with garlic and onion. This was a little soupy but that was probably from my changes. We'll be having this again, and I'll continue to tinker with it. Serve with light sour cream.

Peanut Butter and Cream Brownies

Easy and a real crowd-pleaser! I used a 9-inch cake pan, greased very well, and just ran a knife around the edges of the pan before inverting onto a serving plate - worked great! Didn't have chocolate shavings or peanut butter cups for a garnish, so I just drizzled with some Hershey's chocolate syrup. I ran a butter knife around the edges to keep them crisp. Yum!

Cheesy Sausage Pasta

Quick, tasty and simple! I used half the amount of pasta, skipped the oil and bell pepper and subbed diced tomatoes with garlic instead of the stewed with separate garlic. So good and so easy - thanks for this recipe!

Eggnog Quick Bread

This was good but the eggnog taste wasn't very strong in the bread. I did use 1 1/3 cup eggnog and a small packet of instant vanilla pudding. I also topped with the eggnog frosting/glaze - we liked that. Not sure if I'll make again or not.

Eggnog Gingerbread Trifle

LOVED this! I made it for Christmas Day and those who liked it REALLY liked it. The eggnog is such a great creamy contrast to the spicy gingerbread. I didn't use the cranberries or cookie crumbs but I think next year I'll garnish with those Pepperidge Farm gingerbread men cookies on top. Thank you!

Slow Cooker Stuffing

This was good and so easy. I left out the mushrooms and extra seasonings (besides poultry seas. and parsley). I boiled the giblets in water for an hour or two and used that "broth" plus additional chicken broth to get to the level of moistness we wanted. It was so nice to be able to plug in the slow cooker instead of trying to juggle so many things in the oven!

Juicy Peach Crisp

I made this for my mom's birthday and she loved it! Doesn't make a huge amount but it's so simple and tastes great with vanilla ice cream. I liked the addition of the almond extract. It's the wrong season for fresh peaches so I just used 2 15 oz. cans of sliced peaches.

Tangy Grilled Pork Tenderloin

This was just OK for us. The meat was certainly tender but I felt it was rather bland. I added minced garlic to the ingredients, marinated overnight, then boiled the leftover marinade and let it reduce down and add a bit of butter for richness. Don't know if we'll have again.

Slow Cooker Roast Beef

So simple yet so good! My roast was only about 2 pounds, so I cooked for about 4 1/2 hours on low. I used reduced-sodium soy sauce and found it to be perfect, not too salty at all! We sort of shredded/chunked up the beef and served on soft kaiser rolls with horseradish sauce and provolone.

Slow Cooker Apple Crisp

Easy and so good! I'm thinking about making this for Thanksgiving dessert since I always have problems juggling dishes that go in the oven. I omitted the nuts and think I will try adding oats next time. I used whole wheat flour instead of white and it gave a nice nutty flavor.

Best Steak Marinade in Existence

Simple and good. I used this to marinade a london broil for 24 hours before grilling. The flavor is not super-strong but it's good and tenderizes the meat. I poured the ingredients into a large Ziploc and just kneaded them around, instead of blending.

Teriyaki Sauce

This was good. I used reduced-sodium soy sauce because we're sensitive to salt, added an extra teaspoon of sugar and used freshly grated ginger. I cut a pork tenderloin into 1-inch slices and marinated overnight in this sauce. Then I grilled the pork on our GF grill and boiled the sauce on the stovetop and reduced it so we could use it as a sauce over brown rice. I think the next time I may try using brown sugar instead of white.
