Easy Tortellini Soup

This was so good! It's a very thick soup with lots of flavor. I used diced tomatoes with garlic because that's what was in the cupboard. I'm freezing the leftovers for weekday lunches.

Slow Cooker Chicken Stroganoff

This is a winner! I added a bag of frozen broccoli/cauliflower/carrots to the chicken mixture, then served over pasta. Tastes wonderful and requires little effort!

Chicken Wellington Casserole

I made some changes to this recipe to suit our personal taste. I chopped 2 chicken breasts into bite-sized pieces, combined that with the cream cheese mixture and added about 1/4 cup of white wine with some peas and carrots. I also used an 8 oz. can of crescent rolls to cover an 11x7 pan. Next time I will use more cream cheese for additional creaminess and let it bake for another 5 to 10 minutes. This was a great idea and we really liked it.

Cherry Crunch

I added 4 more tablespoons of butter, 1/4 tsp. salt and 1/2 teaspoon of almond extract. So quick and easy, yet so satisfying on a cold winter night. Loved it - thanks!!!

Tuscan Cream Cheese Spread

OH MY GOSH, this was soooo good! I made some changes but anyone can customize this to their own preferences. I halved the recipe since it was just for my family. I added 4 tablespoons softened butter, a pinch of crushed red pepper and crushed rosemary, skipped the artichokes and green onions, and subbed chopped roasted red pepper for the sun-dried tomatoes and basil for the parsley. This was so delicious and easy, we'll be having this often!!!!

Chicken Enchilada Dip

This was very easy and yummy. I used 1/2 mayo and 1/2 sour cream, skipped the jalapeno and added a drained can of Ro-tel tomatoes with mild chilies. I also used half a packet of taco seasoning sprinkled over the chicken while it baked and added the other half to the dip. Baked on high in my slow cooker for 2 1/2 hours, then kept on the "Keep Warm" setting for the rest of the party. Served with tortilla chips. Yum!

Very Easy Shrimp Dip

Roasted Chicken with Risotto and Caramelized Onions

This risotto was just great! It took REALLY long though, and eventually I had to crank up the heat and cover the pan for it to get done. We'll keep tinkering with this one.

Beef Tips

Found this to be pretty peppery but satisfying. I subbed a can of beef broth for 1 cup of water. I think I may add some sour cream next time, per other's advice.

These are so good! We don't like coconut so we just roll in confectioners sugar and I usually halve the cherries or my cookies get too large. Love the almond extract and cherry combo!!!

Cinnamon Bread Delight

FABULOUS! So moist and delicious! I used one cup of brown sugar and one cup of white sugar, a tablespoon of ground cinnamon and added some pumpkin pie spice to the bottom of the loaf pan. I'm sure this would be good with cream cheese, but it was great served warm with butter. We'll be having this for Christmas breakfast - thanks for the recipe!

Slow Cooker Chicken and Dumplings

This was fantastic! So easy and delicious. I added diced celery and chopped carrots, as well as some rosemary and poultry seasoning. I cooked for 3 hours, added the biscuits and cooked for an additional hour. Yum!

Yummy Eggnog Pie

This was pretty good. I used a graham cracker crumb pie crust and liked it for the contrasting crunchiness since this pie is so creamy. I think I will try halving the recipe and spooning it into mini phyllo tart shells.
