Easy Honey Mustard Mozzarella Chicken

I had high hopes for this one but it seemed just so-so. I think I would like this better if I blended the honey and mustard together before drizzling so the tastes would be more balanced. I used a 3 oz. jar of real bacon bits and added 8 oz. frozen chopped broccoli to the pan (had to bake for an additional 15 minutes). Served this over brown rice. Maybe we'll try again with a few changes. It was definitely very easy, though!

Barbie's Tuna Salad

I normally HATE tuna salad but this was really good! The seasonings and cheese seem to neutralize the overly "fishy" taste/smell that normally bothers me. I used less Miracle Whip than it called for. Thanks for this recipe!

Fabulous Fried Cabbage

I think that if I'd grown up on this dish, I would have liked it more. I thought it was just OK but hubby turned up his nose, so we probably won't make again. I added a diced small onion and sprinkled with the red wine vinegar when done.

Banana Split Cake III

This was a big success! I made the cake in a 10x15x1 pan and skipped the nuts due to personal taste. Next time I think I may try using cheesecake pudding mix. Easy and a crowd-pleaser!

French Onion Casserole

I omitted the celery, onions and peppers due to husband's aversion to them. I added 4 oz. sliced mushrooms and I sprinkled 8 oz. shredded mozzarella over top. This was very simple and satisfying on a cold night. We enjoyed it with a little steak sauce.

Easy Tortellini Soup

This was so good! It's a very thick soup with lots of flavor. I used diced tomatoes with garlic because that's what was in the cupboard. I'm freezing the leftovers for weekday lunches.

Slow Cooker Chicken Stroganoff

This is a winner! I added a bag of frozen broccoli/cauliflower/carrots to the chicken mixture, then served over pasta. Tastes wonderful and requires little effort!

Chicken Wellington Casserole

I made some changes to this recipe to suit our personal taste. I chopped 2 chicken breasts into bite-sized pieces, combined that with the cream cheese mixture and added about 1/4 cup of white wine with some peas and carrots. I also used an 8 oz. can of crescent rolls to cover an 11x7 pan. Next time I will use more cream cheese for additional creaminess and let it bake for another 5 to 10 minutes. This was a great idea and we really liked it.

I added 4 more tablespoons of butter, 1/4 tsp. salt and 1/2 teaspoon of almond extract. So quick and easy, yet so satisfying on a cold winter night. Loved it - thanks!!!

Tuscan Cream Cheese Spread

OH MY GOSH, this was soooo good! I made some changes but anyone can customize this to their own preferences. I halved the recipe since it was just for my family. I added 4 tablespoons softened butter, a pinch of crushed red pepper and crushed rosemary, skipped the artichokes and green onions, and subbed chopped roasted red pepper for the sun-dried tomatoes and basil for the parsley. This was so delicious and easy, we'll be having this often!!!!

Chicken Enchilada Dip

This was very easy and yummy. I used 1/2 mayo and 1/2 sour cream, skipped the jalapeno and added a drained can of Ro-tel tomatoes with mild chilies. I also used half a packet of taco seasoning sprinkled over the chicken while it baked and added the other half to the dip. Baked on high in my slow cooker for 2 1/2 hours, then kept on the "Keep Warm" setting for the rest of the party. Served with tortilla chips. Yum!

This risotto was just great! It took REALLY long though, and eventually I had to crank up the heat and cover the pan for it to get done. We'll keep tinkering with this one.
