Irish Cream Truffle Fudge

I used all semi-sweet chocolate for the bottom layer and all white chocolate for the top layer. Liquor taste was too strong, so I might try again with a reduced amount. I didn't have any problem with the texture.

YUM! Tastes so good and is so easy! It's great to see a non-mayo based recipe. Followed instructions exactly but next time I will add some toasted pine nuts to make it over-the-top.

Colorful Spinach and Prosciutto Side

Easy and tasted good. I only had marinated artichoke hearts and had to sub 1 ounce real bacon bits for the proscuitto but it was still good. I also added about a half cup of shredded mozzarella.

Wild Rice and Beef Casserole

I used a bag of 90 second brown and wild rice to save myself a ton of time, and skipped the water chestnuts since we don't like them. I layered the beef and cheese, as per other reviewer's suggestions. This was easy but a bit bland. I think I may try adding some diced tomatoes to the beef mixture next time.

Bruschetta Chicken Bake

Well, I messed up the directions and this still came out great! I mistakenly put the cheese on top - I had to cover the dish so it wouldn't burn while baking. I used a can of garlic and onion diced tomatoes so I didn't have to add extra garlic or seasoning. I was glad not to have to cook the chicken before baking! This recipe is a keeper.

Pecan Praline Cookies

I doubled this recipe to make half with nuts and half without. I got different results with the brown sugar and butter mixture, depending on how long I cooked it - one batch was softer and one was chewier. I had no problem removing these from the pan. They were cheap and easy and I thought they were pretty good so we'll be having them again!

Easy Skillet Chicken a la King

This was easy and quick but we felt it was way too bland to make again. I added mixed frozen veggies and garlic, served over egg noodles but didn't help to pep it up enough.

Mom's Rum Cake

I used French Vanilla instant pudding and reduced the rum in the glaze to half. I had a problem with the glaze too - I must have boiled it too long because it crystallized when I added the rum. I whisked together as much as I could then strained the glaze and it was very tasty. We'll make again.

This recipe is easily adapted to your own personal tastes. Very simple to make and tastes very fresh. I think I'd prefer with fresh, wilted spinach.

Maraschino Mini Muffins

I think I will add more vanilla and chopped cherries the next time I make this. It was a little dry and bland so I hope that will help. Otherwise, there was a nice cherry flavor to the dough part.

Creamy Broccoli Casserole

I didn't think it needed the cracker crumbs on the bottom of the pan. This was very creamy and tasty but a little bland - I think next time we'll add some garlic powder or Italian seasoning or some cheddar cheese.

Easy, Cheesy Tortellini Bake

Quick, easy and delicious! I used a 16 oz. bag of tortellini, 10 oz. of spaghetti sauce, 14.5 oz. of diced Italian tomatoes and skipped the Italian seasoning. Had to make in an 11x13 pan. Just a great meal - thanks!

I know people rave about this but I just didn't like the crunchy, uncooked ramen noodles. However, this was easy and a nice choice for a very warm day's dinner. Don't know if I'll make again but it wasn't terrible.
