Not so Sloppy Joe Casserole

Reviewed: May 20, 2009
This was OK for a weeknight meal, very filling. We skipped the green pepper due to personal preference. Used Grands biscuits and we were able to peel each one in half, instead of quartering them, so it was really easy to press them into the pan. The only change I would make is to grease the pan first, the bottom of the biscuits seemed to stick.

Funky Frito Fruckies

I love sweet and salty snacks but this just didn't do it for us. It was worth a try...

Roast Beef Stuffed Shells

Reviewed: Apr. 30, 2009
This was good! DH and I think we would prefer mozzarella or provolone instead of the cheddar so we'll try that next time.

Sweet, Sticky and Spicy Chicken

Reviewed: Apr. 28, 2009
This was good but still needs some tweaking for our family. I dredged the chicken in flour per PP. I think I scorched the sauce because I had the heat up to medium-high to thicken it. Might add a bit more honey next time.

Cheesy Beans and Rice

Reviewed: Apr. 22, 2009
This was very good and really fairly easy. I liked that it was meatless, since DH and I could do with less meat in our diets. I had to sub black beans for the kidney beans to personal preference and I increased the cheese to 8 oz. and served with lo-fat sour cream. Easy to make, just a little time-consuming but we'll be having this again.

Breakfast Pizza

Reviewed: Apr. 10, 2009
I made this with the non-perforated crescent roll dough so I just unrolled it into a 9x13 greased pan. It was very bland for us - I think if we'd make it again, I'd need to add onions and peppers. We used a lot of ketchup to get it down.

Slow Cooker Buffalo Chicken Sandwiches

Reviewed: Apr. 9, 2009
I'm giving this four stars because I loved it and my husband hated it (even though we're both huge hot wing fans). I thought this had a great taste and the chicken was very moist, plus it was so simple! Our chicken was done in only 5 hours. We used half the packet of ranch mix so it wouldn't get too salty and I served on hoagie rolls with blue cheese dressing. Loved it!

Tammy's Philly Cheese Steak Dip

Reviewed: Apr. 6, 2009
Heaven! We crave cheese steaks every week so this was definitely for us. I used 8 Steak-Um's chipped steaks, omitted the green pepper and Italian seasoning, added Kansas City steak seasoning and added mushrooms. So good! Next time I'll use at least 4 more steaks. Served with sliced Italian bread.

Spinach Enchiladas

Reviewed: Apr. 3, 2009
We thought this was a bit bland. I used a whole small onion instead of green onions. Surprisingly quick to make but we probably won't have it again.

Beef and Cornbread Bake

Reviewed: Mar. 31, 2009
DH loved this meal! I used salsa instead of picante and we used the whole bag of cheddar. I think this would be good with chicken, too. Next time I will double the cornbread mixture on top and saute an onion with the ground beef. Easy, tasty and filling - thanks!

Chicken Salad with Bacon, Lettuce and Tomato

Reviewed: Mar. 30, 2009
Great lunch! Yummy and easy. I made this on Sunday for a week's worth of work lunches for myself. Portioned the chicken mixture into 5 containers, and then portioned the lettuce into 5 separate containers so it won't get soggy and nasty. I omitted the avocado due to personal preference. This dressing is very good - thanks!

Pepperoni Casserole

Reviewed: Mar. 27, 2009
Yum! This recipe was so tasty! We added Italian seasoning to the cottage cheese and I think next time we'll saute some chopped green pepper with the sausage. Tasted like my fave pizza. This makes a lot and it's very filling so I may freeze half next time. Thanks for the post!

Ice Cream Sandwich Dessert Bars

Reviewed: Mar. 3, 2009
This is a 4-star recipe with the following adjustments - add dry chocolate instant pudding mix to half of the Cool Whip plus 1/3 pound crushed Oreos. Use that as the middle layer and frost the top with the remaining plain Cool Whip. Yum!!

Mediterranean Barley Salad

I'm sorry, I just didn't care for this. It seemed very bland, even though I added chopped cucumber and pine nuts.

Broccoli and Tortellini Salad

Reviewed: Feb. 25, 2009
This was just alright for us. I thought the dressing was too sweet with not enough tang, even though I added more vinegar.

Zesty Italian Pasta

Reviewed: Feb. 24, 2009
This was just alright for me. I added more mozzarella but I would have liked more sauce - I should have decreased the amount of pasta or increased the amount of tomatoes/sauce.

I do all my bacon like this - no more splatters and it's easy to do a large quantity at once. Love it.

This was a hearty, filling and tasty lunch. I subbed a 7 oz. jar of roasted red peppers but I will use more next time. Very good!

Simply Divine Meat Loaf with Spinach

Reviewed: Feb. 5, 2009
This was OK. I subbed minced onion for the onion soup mix so I didn't run into an issue with too much salt. Added 2 cups of spinach instead of just one. I think some mozzarella cheese would be a nice complement. We still dipped in ketchup to add some flavor. Very moist but not to die for.

Meh. This was definitely very easy but I didn't care for it much. Good to try but we won't have again.
