Blueberry Spinach Salad

VERY good. I used oilive oil and balsamic vinager. I also used roasted pignoli nuts instead of pecans. You can't go wrong with the salad.

Addictive Pumpkin Muffins

I cut this recipe in half. I used 1 c whole wheat flour, 1 cup all purpose flour and 1/2 cup ground flax seed. egg beaters, and 1/2 c splenda 1/2 c reg sugar.They were plenty sweet! Very moist, high fiber and filled with good stuff. I love this recipe..it was very easy to convert to a healthy recipe. I did not use paper liners. I used a nonstick muffin pan..they came out beautifully.

Trout with Fiddlehead Ferns

fiddlehead fern is the curled section (new) spring shoot of the fern..look it up in a plant book to be sure you have the correct fern (found all over US) they are the tender new growth that sprouts out of the center of the fern plant-- they melt in your mouth. any substitute would not do justice (possibly dandelion greens could be used)

Simple Scones

EXCELLENT!!I also used 1/2C craisins and 1/2C white choc chips. In place of the raisins. Try buttermilk instead of sour cream too. It made no difference to the taste and/or texture. I have a divided scone pan (williams/sonoma) that works so much better than trying to shape this dough by hand. The less you mess with the dough the more moist it will be.

Sad Cake

This is a very good recipe..but my cake wasn't 'sad' it did not fall. In fact it was fluffy and very much like a cake not a flat chewy cookie like I thought. I followed the recipe to a "T" so I don't know what happened?? but I still enjoyed it!!

Slow Cooker Oatmeal

I boiled the water added the dry steel cut oats and covered with lid.Wait 4 minutes then I turned off the stove and went to bed. In the morning the oatmeal is ready to be quickly heated (add the cream and sugar at that time) this is easy for those who don't have a slow cooker!
