Chocolate Pecan Pie I

I followed the recipe exactly and this pie was excellent. After reading all the suggestions to melt the chocolate, I decided I didn't want to do that bc I wanted chunks of chocolate throughout, so I left the chips alone, like the recipe says. The only issue I faced was cooking time. The center was essentially still liquid after 50 min so I covered the pie in foil for another 15 min and it was done. I brought this to Thanksgiving and it was a HUGE hit with my family.

Chocolate Chip Peppermint Cookies

I was hesitant to make these bc some of the recent reviews aren't great. But I tried it anyway and they turned out GREAT. They are the perfect balance between chocolate and mint and my family loved them. I added 1 1/2 teaspoons of mint extract for a little stronger mint flavor and it was great. I also used 1 cup of semi sweet chips and 1/4 cup mini semi sweet chips. Delish!

Lentil and Sausage Soup

As other reviewers suggested, I used hot Italian sausage and added in 1/2 teaspoon crushed red pepper (and the rest of the spices the recipe called for). The result was a spicy, delicious soup! We like our soups a little thicker so I added 9 cups of water and three bouillon cubes and it was perfect. I cooked on low for about 1.5 hours and it was done. Great recipe.

Broiled Tilapia Parmesan

Slow Cooker Buffalo Chicken Sandwiches

This was a HUGE hit in our house. I omitted the ranch seasoning and instead lightly seasoned the chicken with garlic, salt and pepper. I added the butter (which I melted) in the beginning. I also added a little bit of water. It turned out SO well. YUM! I can't wait to make this again.

Stuffed Green Peppers

This is exactly how my Italian grandmother makes stuffed peppers! This is the perfect recipe. You definitely DO NOT cook the meat before putting them in the pepper. I usually turn the pepper upside down and brown the top part of the ground beef to get the meat cooking. Then I sit it in the sauce and let it simmer for a few hours so the pepper gets very tender.

Easy PHILLY OREO Cheesecake

This was my first attempt at making any kind of cheesecake and it was beautiful looking and tasted absolutely delicious. I brought it with me to a party and it was the only dessert that every single person wanted. The top cracked, even though I left it in the oven to cool, but you couldn't tell because of the Oreos on top. The only small change I made to the recipe was I added more crushed Oreos to the top.

Banana Coconut Loaf

I LOVE this recipe! It is so much more flavorful and exciting than regular banana bread. I did make a few small changes. I left out the cherries, used sweetened coconut, subbed pecans bc I didn't have walnuts, and used 1/2 white sugar and 1/2 brown sugar. It turned out PERFECT!

Skillet Apple Chicken

I followed everything reviewer "icookstuff" said and it turned out very nicely. I also added 2 tbl of brown sugar to make it a little bit sweeter. I didn't have rosemary so I used thyme instead, and it worked just fine. I put some crushed pecans on top, and it was great.

Sausage Hash

This was a HUGE hit at brunch. I microwaved the potatoes until the they were mostly tender, and then added them in at the end just to brown them a little. I also omitted the carrots.

Easy Quiche

I've never made quiche before, and I really liked how easy and tasty this was. I switched up the ingredients a little bit--- I used frozen spinach, turkey, cheddar and parmesan, and made them into mini-quiches. They're very light and airy, and have a lot of flavor. I'm serving them at brunch tomorrow, so we'll see how others like them.

Fresh Broccoli Salad

This was a huge hit at our Memorial Day bbq. I changed the recipe slightly--I used 1 large head of broccoli and added a small bag of shredded cabbage/carrots (what you'd use for coleslaw). The salad look beautiful and tasted even better! I will definitely make this again.

Brooke's Best Bombshell Brownies

This was my first time trying homemade brownies--I usually make them from a box--and I LOVED this recipe. I cut the sugar to 2 1/4 cups and I used cake flour instead of sifting regular flour. They definitely came out a little lighter and not so dense, which I loved. I forgot the chocolate chips and they were still amazing. I cant wait to make these again.

This is a delicious and easy recipe. I made a few minor changes. I used 2 teaspoons of cinnamon and 1 teaspoon of nutmeg for a little added zest and it turns out great!

Baked French Toast

I took the advice of other reviewers and reduced the liquid. I also made it healthier by using fat free half and half, and 1% milk. It turned out PERFECTLY. It was a hit at brunch and everyone wanted the recipe. I also love that you make it the night before--so easy! I will DEFINITELY make this again and again.

Sugar Coated Pecans

This recipe is so simple and is amazingly delicious. I didn't have eggs, only egg beaters, so I used a little bit of that, and they still turned out delicious. I also added some nutmeg. I put the pecans on top of a fall salad and they were a HUGE hit!

Easy Baked Chicken Cordon Bleu

I really like this recipe. It's definitely messy, but its quick and very tasty. I used 2 slices of virginia ham and 1 slice of swiss, and rolled up the chicken and secured with a bunch of toothpicks and the cheese did not run out at all. I will make this again!

This recipe was delicious! I omitted the colby cheese and just did parmesan, and it was still delicious. I also added broccoli instead of the tomatoes. I will definitely make this again

Chicken Pot Pie III

This was a HUGE hit in our house! I did make a few changes. I used 1 can of cream of potato soup and 1/2 can of 99% fat free cream of mushroom to try and lower the fat grams. I also added a splash of milk to make it a little less thick. And I left out the thyme bc we didn't have any. It turned out GREAT! We ate from it 2 nights in a row and I can't wait to make it again.
