Fruit Pizza II

We all enjoyed this beautiful dessert. It was very simple to make. For the crust I used a sugar cookie recipe I had on file and baked it in a springform pan. Fresh strawberries, kiwi, and pineapple were used to top the cream cheese/whipped cream mixture. The glaze complimented all of the flavors so perfectly. This is such an impressive looking dish. It would also be perfect to serve dinner guests. Thanks for sharing this recipe; I will definitely be making it again.

Tofu Peanut Stir-Fry

I was very pleased with the way this dish turned out. I didn't follow the recipe exactly as stated, because I didn't have all of the ingredients on hand. I also added some additional ingredients to suit my taste. Instead of stir-fry veggies, I used a mixture of frozen sliced carrots with broccili and cauliflower, which I added to one chopped sauteed onion and three 3 cloves of minced garlic. Powdered ginger was used, but next time I will be sure to use fresh. I skipped the eggs and tossed the tofu in arrowroot, instead of cornstarch, before cooking it in the hot oil. I used a very good prepared Thai peanut sauce and added whole almonds, as suggested by another reviewer. To enhance the flavor more, I added five spice powder, garlic powder and soy sauce. We all loved this dish and found it was best served over rice. The almonds complimented the flavors well and added a nice crunch. This is definitely a keeper. Thanks for sharing.

Zucchini Bread III

Great recipe. The bread was moist, had great color and flavor. I substituted 1 cup of applesauce for the oil, used only whole wheat flour, 1 cup of brown sugar, and added 1/4 cup of flax seeds. I baked the bread last night and served it this morning. It was sweet, but not too sweet, with a nice nutty flavor. I'll be making this regularly from now on.

Honey Wheat Bread I

This has been my all time favorite bread recipe since the first time I made it in 2003. The bread tastes great as is, but sometimes I like to add 1/2 cup each of sunflower and flax seeds. I always add vital wheat gluten to improve the way the bread rises. I let the bread machine knead the dough, then I bake the loaves in the oven.

Denise's Peanut Chicken

This recipe was delicious and packed with a great combination of flavors. It had a real authentic Asian taste. I had to make a few changes, because I didn't have some of the ingredients on hand. I used extra light tasting olive oil, skinless-boneless chicken thighs, 3 chicken bouillon cubes with 3 cups of water, forgot to add the sugar, granulated garlic, crushed pepper flakes, black pepper, and 1/2 cup chunky peanut butter. I reserved some of the chopped scallions and sprinkled them over the dish before serving. This recipe is a definite keeper! Thanks for sharing it.

Soft Garlic Parmesan Breadsticks

These came out soft, cheesy, and nice. I prepared the dough in the bread machine and allowed them to bake for 10 minutes. Thanks for sharing the recipe; I will certainly be making these again.

Szechwan Shrimp

My family enjoyed this dish; it was very tasty. I don't think it tasted anything like the real Szechwan Shrimp served at most Chinese restaurants though. As suggested by other reviewers, I tripled the ingredients for the sauce, and I doubled the green onions, garlic, and shrimps, and added 2 Tbsp. fresh lemon juice. I also added about a tsp. of sesame oil. Will be making this again.

Stuffed Eggplant with Shrimp and Basil

This is a great recipe with a huge amount of flavor; it is easy to make and very versatile. I followed the recipe as stated, except for the following additions. I chopped a medium size onion, a small red, and a small green bell pepper, and sauteed them before I added the rest of the ingredients. I also added thyme and extra garlic, and I used one cup of bread crumbs instead of two. Everyone loved it, and I will definitely be making this again. Thanks for sharing the recipe.

Slow Cook Thai Chicken

Cumin can be very over powering when used in large amounts. Some individuals may find that this recipe yields even greater results when the cumin is reduced from 1 Tbsp. to 1/2 tsp.

Spanish Flan

This recipe was very simple to make. The flavor was so delicious and the texture was just right. I took the advice of some of the other reviewers and added a tiny amount of water to the sugar, which made it easier to melt and carmelize. I also strained the custard before I put it in the oven. The caramel didn't disolve completely when the flan was finished baking, but that could have been because I didn't refridgerate it over night before serving. I was able to stretch the syrup, however, by adding a little water to the hardened caramel which remained in the pan; I let it sit 45 minutes until it all disolved, and I served it with the flan.

Simple Scones

These scones were simply delicious and very simple to make. Because I didn't have sour cream, I used butter milk instead. Added one cup of raisins, lemon zest, and added one tsp. of vanilla extract. I used cold butter, which I cut into chunks. The food processor made this recipe almost effortless to prepare. The whole family loved them; will surely make these again.

Supreme Strawberry Topping

This was good. I pureed most of it and left a few chunks remaining. It was served over waffles. I think this would also be perfect over ice cream, which is one of the ways I will serve it when I make it again.

To Die For Blueberry Muffins

I didn't follow the recipe exactly as stated. I used frozen blueberries, added 1 tsp. vanilla extract, subbed half the oil with applesauce, used buttermilk, but increased the amount by 1/4 cup, used only 1/2 c. sugar, and halved the topping. These were very good; I will definitely be making them again.

Cinnamon Raisin Swirl Bread

This recipe makes a very good cinnamon raisin bread. I had to add a little more flour, as the dough was very sticky. The loaves didn't rise as high as I had expected; may consider using a single 11"x5" loaf pan in the future. An additional 1/2 cup of raisins was added to the brown sugar and cinnamon prior to rolling. Some extra brown sugar was also added. Will definitely make this again.

Creamy Chocolate Pudding

Because I didn't have all the ingredients on hand, I made the following changes: Warmed the milk, sugar, and salt in a pot over low heat. I used a 1oz. unsweetened baking chocolate square, which I added to the milk. Wisked until chocolate was completely melted. I used 1/8 c. plus 1/2 Tbsp. of arrowroot, which I mixed into 1/2 c. of water. I wisked the arrowroot mixture into the hot chocolate mixture; kept wisking til thickened. Added the butter and vanilla last. Pudding came out silky smooth and delicious. Husband and kids loved it.

Grandma's Lemon Meringue Pie

This pie was delicious! I followed the advice of some of the others. I made the meringue first and added 1/2 tsp. of cream of tartar and 1/2 tsp. vanilla extract. For the filling I replaced the water with milk and added another 1/4 cup of sugar. I strained the filling before pouring it into the crust. For the crust I used Nick Malgieri's recipe for sweet pie dough, which included ingredients such as butter, baking powder and one egg. The pie was delicious with great flavor, smooth texture, and the meringue was perfect. I will definitely make it again, but the next time I will not add the additional 1/4 cup of sugar.

Mombasa Pumpkin Dessert

I felt that this recipe needed a lot of spicing up, so I added 2 tsp. cinnamon, 1 tsp. nutmeg, 1/2 tsp. ground ginger, 1/2 tsp. ground cloves, and 1/4 tsp. allspice. I used a stick blender to give it a smoother consistancy. The flavor was out of this world, but I think it was just a little too sweet. The next time I will use 1 1/4 cups of sugar.
